The Director of Fine Dining is responsible for the strategic leadership, operational excellence, financial performance, and guest experience across Wynn Las Vegas' portfolio of Forbes Travel Guide-rated fine dining restaurants. This position provides direction and oversight for restaurant management teams, ensuring the consistent delivery of exceptional service, culinary excellence, and luxury hospitality standards that reflect the Wynn Las Vegas brand.

The Director of Fine Dining serves as a key business leader within Food & Beverage operations, driving revenue growth, operational efficiency, team member development, and guest satisfaction while maintaining compliance with all company policies, health regulations, and quality standards. This role partners closely with Culinary, Beverage, Hotel Operations, Marketing, Human Resources, and Finance leadership to create memorable dining experiences that exceed guest expectations. The position aligns with Wynn's commitment to luxury hospitality, service excellence, and operational innovation.

Essential Job Responsibilities

Strategic Leadership

  • Develop and execute strategic plans for all fine dining outlets to achieve revenue, profitability, and guest satisfaction goals.
  • Lead and mentor Restaurant General Managers, Assistant General Managers, and front-of-house leadership teams.
  • Establish and maintain operational standards that reflect Wynn Las Vegas and Forbes Five-Star service expectations.
  • Identify opportunities for innovation, guest experience enhancements, and operational improvements.
  • Participate in long-term business planning, budgeting, and capital improvement initiatives.

Operational Excellence

  • Direct daily operations across multiple fine dining venues to ensure seamless execution of service standards.
  • Ensure consistency in service delivery, guest engagement, and operational procedures across all outlets.
  • Monitor restaurant performance through key performance indicators, guest satisfaction metrics, and operational audits.
  • Collaborate with Culinary and Beverage leadership to maintain exceptional food and wine service standards.
  • Ensure optimal staffing levels and labor utilization while maintaining service excellence.

Financial Management

  • Develop and manage annual operating budgets for assigned restaurant venues.
  • Drive revenue growth through strategic business initiatives, enhanced guest experiences, and operational efficiencies.
  • Analyze financial performance reports, labor costs, product costs, and profitability metrics.
  • Implement controls and accountability measures to maximize financial performance while maintaining luxury service standards.
  • Identify opportunities for cost savings and process improvements without compromising the guest experience.

Guest Experience & Service Culture

  • Champion a culture of luxury hospitality and personalized guest service.
  • Ensure all guest interactions are handled with professionalism, discretion, and urgency.
  • Develop service recovery strategies and personally oversee the resolution of significant guest concerns.
  • Monitor guest feedback and proactively implement improvements based on guest trends and insights.

Qualifications

Education

  • Bachelor's degree in Hospitality Management, Business Administration, Restaurant Management, or a related field preferred.
  • Equivalent combination of education and relevant experience may be considered.

Experience

  • Minimum 10 years of progressive Food & Beverage experience in luxury hotels, casino resorts, or fine dining restaurant operations.
  • Minimum 5 years of multi-unit restaurant management experience at the director or senior management level is preferred.
  • Proven track record of leading Forbes-rated, Michelin-recognized, or luxury dining establishments preferred.
  • Experience managing large, diverse teams in a high-volume luxury hospitality environment.
