Mambo Seafood is a high-volume iconic Houston restaurant brand that has been in business since 1996. Mambo has 12 restaurants in the Greater Houston area, one location in San Antonio, and one franchised operation in the Rio Grande Valley. Mambo Seafood is poised for rapid growth!
Summary
The primary responsibility of a Cutter is to cut, peel, clean and prepare raw seafood. Another important responsibility of the Cutter is to maintain the seafood display.
Essential Duties & Responsibilities
  • Maintains a professional and welcoming attitude while at work.
  • Practices Company food quality principles.
  • Complies with food safety standards and regulations.
  • Cuts, peels, cleans and prepares raw seafood.
  • Maintains raw seafood display according to Company guidelines.
  • Follows the production chart to meet daily seafood preparation and display goals.
  • Properly stores and rotates seafood products.
  • Maintains proper temperature for raw seafood products.
  • Sets up and sanitizes cutting area.
  • Maintains cleanliness of coolers, freezer, and seafood display.
  • Assists the kitchen and performs additional duties as needed.

Qualifications
EDUCATION & EXPERIENCE

  • Must be at least 18 years of age.
  • Ability to speak, write and read simple instructions in English.
  • Spanish-speaking is a plus, but not required.
  • Must have a Food Handler Certificate.
  • Must be a team player and customer-service oriented.

Physical Requirements
  • Stands and walks on uneven, slippery, and/or wet surface for at least 8 consecutive hours.
  • Reads food safety measuring devices.
  • Routinely lifts, stoops, kneels, bends, pushes, and pulls up to 50 pounds, and reaches overhead.
  • Routinely carries full service tray.
  • Cuts, measures, and mixes food items in a wet environment.
  • Performs moderately strenuous activity for at least 8 consecutive hours.
  • Performs other physical requirements necessary to perform duties and responsibilities.

Working Environment
  • Moderate noise, fast pace, high traffic, and high temperatures.
  • Ability to tolerate ice and cold temperatures and cleaning solutions on a regular basis.
