Prep Cook

The role of dishwasher/prep exists to set the stage for a world-class dining experience, whether through cleaning & sanitation of service-ware or preparation of food products.

Daily Responsibilities of Dishwasher/Prep include but are not limited to:

  • Understands and adheres to all food safety and sanitation procedures and promotes a safe work place

  • Follow excellence in great uniform standards daily

  • Communicates with chef, managers and other team members to learn of daily features, events, and important shift information

  • Retrieves sufficient food product from storage based on daily production needs and par levels for prep

  • Sets up station with food products and utensils and turns on equipment to ensure the station is ready for production

  • Cuts, slices, unwraps, and prepares raw ingredients (ex. fresh produce, meat cuts) for use on the line and for use in food prep recipes

  • Mixes and assembles recipe ingredients using proper portioning techniques and recipe procedures to create prepared food products

  • Assists Chef with evaluation of on hand par levels and completion of daily prep lists

  • Checks and adjusts temperature of equipment to ensure food is cooked and stored at the proper temperature

  • Prepares food items using recipe instructions, proper portioning methods, and cooking standards

  • Inspects color, consistency, firmness, and temperature of food products to ensure food is cooked to standards

  • Assembles the dish machine and maintains the dish station to prepare for cleaning and sanitizing silverware, plateware, glasses, etc.
