Au quotidien:

  • Effectuer les tâches qui lui sont confiées par le/la Sous-Chef, le/la Chef de Cuisine et/ou le/la Directeur(trice) Général(e).
  • Assurer la préparation quotidienne des aliments conformément aux standards O&B.
  • Préparer et dresser les plats avec précision, constance et souci du détail, tout en maintenant des standards élevés à chaque service.
  • Respecter les recettes, les quantités par portion et les standards de présentation établis par le restaurant.
  • Maintenir une liste de préparation (prep list) afin d’assurer le suivi des tâches liées à sa station.
  • Appliquer la méthode FIFO afin de maximiser la fraîcheur des aliments et de limiter les pertes.
  • Participer à la gestion et au contrôle des stocks alimentaires.
  • Participer à la réception des marchandises et veiller à leur entreposage adéquat.
  • Nettoyer les espaces de préparation, les équipements et les ustensiles, tout en respectant rigoureusement les normes d’hygiène, de salubrité et de sécurité alimentaire.
  • Respecter rigoureusement les normes et directives du SIMDUT (WHMIS) ainsi que les fiches de données de sécurité (FDS/MSDS).
  • Effectuer toute autre tâche ou responsabilité qui lui est confiée ou qui est requise dans le cadre de ses fonctions.

The day to day:

  • Perform delegated tasks from the Sous Chef, Chef de Cuisine, and/or General Manager
  • Day-to-day food preparation of the restaurant according to O&B standards
  • Cook and plate dishes with precision, consistency, and attention to detail, maintaining high standards during every service
  • Follow recipes, portion controls, and presentation specifications as set by the restaurant
  • Maintain a prep list of station duties
  • Follow the FIFO method to maximize freshness
  • Assist in food inventory and control
  • Assist in properly receiving and storing delivered items
  • Clean food prep areas, equipment, and utensils, and strictly adhere to sanitation, food safety, and hygiene guidelines
  • Strictly adhere to WHMIS and MSDS guidelines
  • Other duties or responsibilities as assigned or required
Qualifications
  • Minimum de 3 ans d’expérience en cuisine dans un environnement de restauration à rythme soutenu.
  • Diplôme ou formation en cuisine professionnelle, un atout.
  • Bonne connaissance des techniques de cuisine professionnelle et excellente maîtrise des techniques de manipulation des couteaux.
  • Capacité à suivre les directives et à travailler efficacement et avec calme sous pression.
  • Capacité à travailler debout pendant toute la durée du quart de travail.
  • Capacité à être responsable d’une station et à en assurer le bon fonctionnement.
  • Capacité à travailler à la station des sauces.
  • Certification en manipulation des aliments valide, un atout.
  • Disponibilité pour travailler les soirs, les fins de semaine et les jours fériés, au besoin.
  • Être légalement autorisé(e) à travailler au Canada.
  • 3+ years cooking experience in a fast-paced restauran
  • Culinary diploma/degree is an asset
  • An understanding of professional cooking and knife handling skills
  • Ability to take direction and work calmly and effectively under pressure
  • Able to spend 100% of the time standing
  • Able to be in charge of a station
  • Able to work sauce station
  • Valid Food Handlers certificate, preferred
  • Availability for evenings, weekends, and holidays as needed
  • Legally eligible to work in Canada
