As a Garde Manger, you're not just leading the preparation and presentation of high-quality cold food items - you're spreading the light and warmth of hospitality by delivering memorable experiences that make the stay for every guest.
Responsibilities
Here's what you'll do during a typical day:
  • Prepare exceptional cold dishes: Create and assemble salads, cold appetizers, dressings, and other chilled menu items
  • Manage charcuterie and specialty items: Prepare pâtés, terrines, smoked meats, cheeses, and decorative garnishes
  • Enhance menu offerings: Create and implement new dishes and seasonal menus to elevate the dining experience
  • Drive culinary excellence: Select high-quality ingredients, uphold presentation standards, and ensure consistency in execution of dishes
  • Manage product inventory: Maintain an adequate supply of prepared products and ensure proper storage for freshness and quality
  • Uphold regulatory standards: Maintain compliance with health, safety, sanitation, and alcohol awareness regulations, ensuring the highest standards of guest and team member wellbeing
