Gestionnaire de categorie, produits en conserve et secs - En presentiel


Le role

Vous serez responsable de bout en bout de la categorie epicerie et produits secs - conserves, sauces, condiments, huiles, grains secs, epices et produits de base - a travers un reseau national de restaurants couvrant plusieurs marques et formats.

  • Les produits secs et en conserve sont au cur des operations en cuisine. Il s'agit souvent des articles les plus volumineux et les plus contractuels du menu - ou la rigueur dans la gestion des SKU, la consolidation des fournisseurs et la negociation des couts ont un impact direct sur la rentabilite des franchises. Vous devrez apporter structure, rigueur et sens commercial a chaque decision d'approvisionnement.
  • Vous collaborerez etroitement avec les equipes culinaires, de chaine d'approvisionnement, des operations et des finances. Ce poste offre une reelle responsabilite et une portee significative pour quelqu'un souhaitant approfondir une categorie qui touche presque tous les plats du menu.


Approvisionnement et gestion des fournisseurs : Developper et gerer des relations avec des fournisseurs nationaux de produits d'epicerie et secs, incluant de grandes entreprises CPG. Gerer l'assortiment complet, des huiles et condiments aux conserves et produits de base.

Gestion des contrats et des couts : Negocier des contrats fournisseurs pluriannuels, des engagements de volume et des structures de remises. Gerer les fichiers PA et les programmes hors facture. Collaborer avec la gestion des revenus pour proteger les marges.

Rationalisation des SKU et consolidation des fournisseurs : Gerer activement le portefeuille de SKU afin de reduire la complexite, ameliorer la fiabilite de l'approvisionnement et renforcer le levier commercial. Moins de fournisseurs, de meilleures conditions, une execution plus efficace.

Intelligence de marche et tarification : Surveiller les marches des matieres premieres (huiles, grains, etc.), anticiper les fluctuations de couts et ajuster les strategies d'approvisionnement pour proteger le reseau contre les pressions inflationnistes.

Qualite et conformite : Definir les specifications produits et travailler avec l'assurance qualite pour auditer les fournisseurs. Veiller au respect des normes de l'ACIA, de la securite alimentaire et des exigences des marques.

Collaboration menu : Travailler avec les equipes culinaires pour planifier les besoins en produits secs pour les menus de base et les offres a duree limitee. Fournir des informations en amont sur les couts et la disponibilite.

Optimisation de la chaine d'approvisionnement : Collaborer avec la chaine d'approvisionnement pour ameliorer les cycles de commande, reduire les ruptures de stock et minimiser les surplus. Coordonner avec Sysco et d'autres distributeurs.

Profil recherche

Nous recherchons une personne experimentee - idealement dans un environnement multi-marques, franchise ou QSR/FSR - prete a assumer un role avec plus d'autonomie et d'impact.

  • 5+ ans d'experience en approvisionnement ou gestion de categorie (produits secs/epicerie/restauration)
  • Experience directe avec des fournisseurs CPG majeurs et comprehension des remises, programmes hors facture et fichiers PA
  • Fort sens commercial et capacite a negocier efficacement
  • Experience en rationalisation de SKU

Category Manager, Canned & Dry - On-Site

The Role

You will own the grocery and dry goods category end to end - canned goods, sauces, condiments, oils, dry grains, spices, and centre-of-plate staples - across a national restaurant network spanning multiple brands and formats.

Dry and canned goods are the backbone of kitchen operations. These are often the highest-volume, most contract-intensive items on the menu - where discipline in SKU management, supplier consolidation, and cost negotiation directly impacts franchisee profitability. You will be expected to bring rigour, structure, and commercial acumen to every sourcing decision.

You will work closely with culinary, supply chain, operations, and finance. The role carries real accountability and meaningful scope for someone who wants to go deep in a category that touches almost every dish on the menu.


What You Will Own

  • Sourcing & supplier management: Build and manage relationships with national grocery and dry goods suppliers - including major CPG companies. Own the full assortment from oils and condiments to canned goods and dry staples.
  • Contract & cost management: Negotiate multi-year supplier contracts, volume commitments, and rebate structures. Manage PA files and off-invoice programs. Work with Revenue Management to protect category margins.
  • SKU rationalization & vendor consolidation: Actively manage the SKU portfolio to reduce complexity, improve supply reliability, and strengthen commercial leverage. Fewer vendors, better terms, tighter execution.
  • Market intelligence & pricing: Monitor commodity markets for oils, grains, and key inputs. Anticipate cost movements and adjust sourcing strategies to protect the network from inflationary pressure.
  • Quality & compliance: Set product specifications and work with QA to conduct supplier audits. Ensure all products meet CFIA standards, food safety requirements, and brand specifications.
  • Menu collaboration: Partner with culinary teams to plan dry goods requirements for core menus and LTOs. Provide early cost and availability input before products are committed to franchisees.
  • Supply chain optimization: Work with supply chain to improve ordering cycles, reduce out-of-stocks, and minimize excess inventory. Coordinate with Sysco and other distributors on item listing and availability.


What We Are Looking For

We are looking for someone who has done this before - ideally in a multi-brand, franchised, or QSR/FSR environment - and is ready for a role with more scope, more autonomy, and more impact.

  • 5+ years in procurement or category management in dry goods, grocery, or centre-of-plate sourcing within a foodservice, QSR, or multi-unit restaurant environment
  • Direct experience managing contracts with major CPG suppliers and understanding the structure of off-invoice programs, volume rebates, and PA files
  • Strong commercial instincts - you know how to build leverage in a negotiation and when to consolidate versus maintain competition between suppliers
  • Experience with SKU rationalization and the discipline to manage a large assortment without letting it grow unchecked
  • Strong negotiator with a track record of supplier relationships that deliver beyond the initial deal
  • Analytically sharp - comfortable with data, pricing models, and cost analysis; Excel proficiency required, Power BI and NetSuite are assets
  • Fluent in both French and English (oral and written)
  • Highly autonomous - you manage your own priorities, move without waiting to be told, and take ownership of outcomes
  • Comfortable with complexity - multiple brands, multiple formats, multiple stakeholders, always moving
  • Familiar with CFIA regulations, food safety standards, and traceability requirements
