As the Banquet Chef, you'll lead the banquet and Convention Services kitchen — producing everything from working breakfasts and coffee breaks to receptions, buffets, plated dinners, weddings, and VIP events. Responsibilities

Picture yourself being the Banquet Chef at Big Sky Resort and having the opportunity to:

  • Lead culinary execution of every banquet event — plated meals, buffets, receptions, breaks, weddings, and holiday programs
  • Run event-day production from the pass — expediting plate-ups, coaching in real time, and directing the kitchen through multi-event days
  • Translate BEOs into production plans, prep lists, ordering, and staffing for every event
  • Attend weekly BEO meetings and partner with Conference Services and Banquet Operations teams
  • Manage banquet food cost — order to the BEO, produce to the guarantee, track variance event by event
  • Schedule banquet kitchen labor to the event calendar and flex staffing with volume
  • Execute allergen and dietary accommodations at group scale with the same quality as the standard menu
  • Uphold food safety and HACCP standards at banquet scale — holding, transport, and buffet service
  • Hire, train, and develop your team of banquet sous chefs and cooks, while promoting a fun work environment
  • Accept and provide feedback and coaching to support our team members regularly
  • Learn and follow our Boyne Standards and Boyne Basics to better serve our guests
Qualifications

Recipe for Success

  • Have one of the following: a 2-year culinary degree with 5 years of banquet experience; a 4-year culinary degree with 2 years of banquet experience; or ACF Certified Executive Chef (CEC) with 2 years of banquet experience
  • Have proven success executing plated events at scale and multi-event days
  • Possess strong planning and organizational skills — banquets are won in the prep, not on the day
  • Have extremely high standards and an acute attention to detail
  • Display a strong sense of urgency while assuring consistent achievement of quality standards
  • Show a high level of personal initiative, technical problem solving, and an action and results driven approach
  • Possess strong interpersonal and motivational skills, and the ability to effectively supervise and inspire staff
  • Excel in an environment with varied tasks while staying cool under pressure
  • Openness to work within established standards and procedures
  • Strong working knowledge of Microsoft Office, Outlook, Word and Excel
  • Be available to work early, mid-day and evening shifts, weekends and holidays
  • Be able to lift at least 50 pounds
