Responsibilities

  • Cut, trim, portion, debone, grind, and prepare meat, poultry, and seafood according to recipes, menu specifications, production requirements, and quality standards.
  • Perform whole-animal butchery and prepare a variety of proteins using proper knife techniques and equipment.
  • Accurately weigh, label, date, and store all products in accordance with established procedures.
  • Receive meat and seafood deliveries; inspect products for quality, freshness, temperature, and accuracy before properly coding, rotating, and storing them.
  • Maintain appropriate par levels and monitor inventory to support daily production needs.
  • Place meat, seafood, and other protein orders when assigned or when the Head Butcher is unavailable.
  • Follow FIFO procedures and accurately monitor yields, portions, inventory, and product waste.
  • Maintain a clean, organized, and sanitary work area, including butcher rooms, coolers, storage areas, tools, and equipment.
  • Follow all food safety, sanitation, hygiene, HACCP, and workplace safety requirements.
  • Immediately report equipment malfunctions, maintenance concerns, food-quality issues, and safety hazards to management.
  • Train and support newly hired Butchers and Butcher Helpers on proper cutting techniques, product handling, sanitation, and departmental procedures.
  • Assist in other butcher rooms or production areas as needed to support operational requirements.
  • Maintain required production, inventory, ordering, and waste records.
  • Perform additional duties as assigned by the Executive Chef or supervisor.

Qualifications

  • Minimum of 1 year of professional experience as a Butcher, preferably within a high-volume culinary, hospitality, catering, or food-production environment.
  • Experience with whole-animal butchery and the preparation of meat, poultry, fish, and seafood.
  • Strong knife skills and knowledge of proper cutting, trimming, deboning, grinding, and portioning techniques.
  • Knowledge of food safety, sanitation, proper storage, temperature control, product rotation, and cross-contamination prevention.
  • Ability to read, understand, and follow recipes, production sheets, menu specifications, and verbal or written instructions.
  • Ability to identify product quality, freshness, and proper portion sizes.
  • Strong organizational and time-management skills, with the ability to work independently and collaboratively in a fast-paced environment.
  • Ability to manage a substantial workload, prioritize assignments, and complete tasks within strict production deadlines.
  • Ability to accurately monitor inventory, product yields, portion control, and waste.
  • Willingness to train and support newly hired team members.
  • Flexibility to work various shifts, including early mornings, nights, weekends, and holidays, based on business needs.
  • Ability to stand and walk for extended periods and work in refrigerated, wet, humid, hot, or otherwise varying-temperature environments.
  • Ability to frequently use hands and arms for cutting, handling, reaching, loading, and preparing products.
  • Ability to bend, stoop, kneel, crouch, push, pull, and lift or move up to 50 pounds, with or without reasonable accommodation.
  • High school diploma or equivalent preferred.
