Job Description:

Under the supervision of the Director of Beverage, the incumbent will primarily assist the Assistant Director of Beverage as the resort's key report during the hours of operation. Primarily responsible to ensure consistency of service through the implementation of policy and procedure, training and certification, recognition and discipline of all evening beverage staff members.

ESSENTIAL JOB FUNCTIONS:

May include but are not limited to:

  • Must adhere to Seminole Tribe's Policies and Procedures.
  • Conducts themselves in accordance with all Gaming Commission Regulations, and Seminole Tribe of Florida/departmental policies and procedures.
  • Oversees floor, service & operations responsibilities for the Beverage department during assigned shift.
  • Focuses on bar operations and infrastructure of the Beverage Department and cocktail operation.
  • Drives Team Member satisfaction with ongoing training and development.
  • Must adhere to Seminole Tribe's Policies and Procedures.
  • MOD on the shift acting as key liaison between the division and the casino and hotel operations.
  • Responsible for the proper planning and operation of all beverage functions.
  • Gathers/tracks vital guest relevant feedback on beverage offerings used to substantiate suggested changes and enhancements regarding both product and services offered.
  • Spearheads the continued emphasis on productivity through the audit of weekly schedules and the establishment of a realistic zero based staffing guide.
  • Implements and monitors beverage control system, making revisions when necessary.
  • Assists in the responsibility of organizing and operating beverage outlets in accordance with approved standards, budgetary limitations, policies and procedures.
  • Assists in the development and implementation of the Beverage department yearly budgets, capitol FF&E's and capital projects.
  • Directs and oversees the day-to-day activities of all beverage outlets.
  • Ensures proper drink preparation and adequate inventory for area of responsibility.
  • Maintains compliance with established staffing and cost budgets.
  • Coordinates employee staffing and work schedules.
  • Promotes positive guest relations at all times.
  • Oversees hiring, training, interviewing, evaluations and supervision of all direct assigned personnel.
  • Knowledge of Seminole Hard Rock Hotel & Casino's policies, procedures and operations.
  • Promotes positive public/employee relations at all times.
  • Maintains a clean, safe, hazard-free work environment within area of responsibility.
  • Performs all other related and compatible duties as assigned.

QUALIFICATIONS:

  • Associates degree is required along with a minimum of 6 years of related experience. Alcohol safety certification and Sanitation certification is preferred.
  • Must present an image of excitement, enthusiasm, and outgoing personality, while being able to project a professional appearance.
  • Commitment to routinely go above and beyond in the accomplishment of position responsibilities in an effort to play a role in the achievement of organizational goals.
  • Proven track record, business management, purchasing and record keeping.
  • Ability to read and understand all Seminole Tribe of Florida policies and procedures.
  • Must be able to communicate effectively with guests in English, specific to position duties and responsibilities.
  • Must be able to complete standard Seminole Tribe of Florida forms and reports.
  • Must have strong interpersonal and leadership skills and ability to sustain positive work environment with a diversified talent.
  • Must possess refined speaking and listening skills.
  • Must possess basic mathematical skills to include ability to add, subtract, multiply and divide specific to position responsibilities.
  • Must have ability to balance cash drawer at end of shift.
  • Must exercise sound judgment in all aspects of position.
  • Knowledge or acquired knowledge of computer and software applications, proficient in Excel and Word.
  • Familiarity with Stratton Warren purchasing system and POS procedures on Info-genesis platform preferred.
  • Strong acumen in managing beverage assets from inventory control, pour analysis, and pricing/purchasing specifications.
  • Experience in high-volume beverage operations preferred.
  • Experience in casino and/or hotel environment preferred.
  • Team-oriented and must enjoy working with and assisting people.
  • Able to exercise judgment on an independent basis.
  • Must be articulate and possess a professional appearance and demeanor.
  • Punctuality and meeting of deadlines is critical.

WORK ENVIRONMENT:

  • The department operates 24 hours a day, 7 days a week; management expectation is that you must be able to work any shift.
  • Environment is that of a restaurant/lounge that is fast-paced and guest services oriented. It is sometimes loud/noisy, and crowded.
  • Prolonged periods of standing/walking.
