Job description

Colossus Bread is looking for one experienced bakery leader to lead our production team, under our Pastry Chef! Our ideal candidate is self-driven, punctual, and engaged. We are currently based out of Long Beach but will soon be moving to our new bakery facility in Anaheim, CA! We are looking for someone to train now in Long Beach with the intention of leading our team in Anaheim along with our Bake Lead and Pastry Chef. :)

We are a woman-owned seasonally driven bakery and cafe serving Long Beach and San Pedro. We specialize in old world sourdough bread, handcrafted croissants and seasonally inspired danishes and other pastries. Our menu changes often and is inspired by the farmers market, herbs and fruit. Our work environment is collaborative and we aim to encourage education and growth at all levels.

Our ideal candidate leads by example, is reliable, and passionate about our company mission to build community through wholesome food, community partnerships, and meaningful interactions.

Responsibilities

  • Train and develop staff of bakers to company standards along with Owner/Chef
  • Anticipate ingredient needs and order, arrange and re-stock accordingly, ordering
  • Ensure a productive kitchen flow that upholds business standards
  • Manage staff and ensure staff take regular breaks
  • Assist in hiring, regular reviews
  • Develop new dishes/pastries in line with the seasons and market availability
  • Keep and organize an orderly and clean kitchen, uphold standards of cleanliness with bakery team and in conjunction with other leaders
  • Work collaboratively with Chef De Cuisine, FOH Cafe Manager, Owner and Pastry Chef to create cohesive menus in line with our company perspective and vision.
  • Assist with costing and testing of new recipes
  • Monitor quality control of products. Accept and provide constructive feedback to bakery team and from leadership and customers


Qualifications

  • Experience in a kitchen management role, extensive experience with pastry production
  • High familiarity with kitchen equipment, processes, and health and safety guidelines
  • Bakery math, experience scaling up and down large recipes
  • Able to delegate tasks effectively and assist when needed, enthusiasm for building a positive and educational team culture.
  • Passion for order, efficiency, and quality in a bakery-setting
  • Adaptable to high traffic and kitchen volume
  • Experience with laminated pastries, seasonal fruit pastry and naturally leavened bread
  • Ability to stand for extended periods of time and work on your feet for up to 8 hours
  • Ability to lift 50 + pounds and operate bakery machinery and equipment
