Commissary Bread + Bakery Manager
About the Role:

-We are seeking an experienced Bread Bakery Manager to run daily operations in the commissary, lead production and staff, manage food and labor costs, and enforce strict quality standards. 

Key Responsibilities:

- Production & Operations: Build daily bake schedules, manage shift flow, and ensure high batch consistency across all products.

- Team Leadership: Hire, train, schedule, and supervise baking and front-of-house staff while holding teams accountable to standard operating procedures.

- Inventory & Financials: Manage ingredient ordering, track COGS and waste, conduct monthly inventory audits, and control labor costs against sales.

- Quality & Compliance: Enforce health code standards, manage HACCP/sanitation checklists, and oversee regular maintenance of commercial kitchen equipment.

Requirements

 -2+ years of supervisory or management experience in a commercial bakery or high-volume food production setup.

- Strong working knowledge of kitchen economics (COGS, yield analysis, labor scheduling).

- Hands-on experience with commercial bakery operations, equipment, and production timing.
