Job description

Position Summary

Old Bust Head Brewery is looking for a hands-on Brewer/Cellarman to join our production team — someone who takes pride in consistent days, clean cellar work, and a well-run brewhouse. You'll work closely with our Head Brewer across brewing, fermentation, and cellar operations, with the flexibility to pitch in on packaging days when needed.

Key Responsibilities

Brewing
• Execute brew days start to finish: milling, mashing, lautering, boiling, and whirlpool, following recipe specs
• Operate and monitor our brewhouse systems, including our 30-bbl brewhouse and 7-bbl pilot system for small-batch and R&D brews
• Accurately record brew log data (gravities, times, temperatures, volumes) and flag deviations

Cellar

• Manage fermentation, transfers, dry-hopping, fining, and carbonation
• Harvest, wash, and pitch yeast; support yeast propagation as needed
• Run CIP/sanitation cycles on tanks, transfer lines, and brewhouse vessels
• Perform QA/QC checks — gravity, pH, dissolved oxygen, sensory — and keep clean, accurate records


General
• Support raw material receiving, organization, and inventory counts
• Manage cold box organization and pull distribution orders
• Maintain a clean, safe, and organized brewhouse and cellar
• Assist the packaging crew on canning days as production needs require
• Follow all safety, sanitation, and TTB/ABC compliance procedures

Qualifications
• 2–3+ years of commercial brewing or cellar experience required
• Solid understanding of brewing science, fermentation, and cellar best practices
• Comfortable lifting 55+ lbs, climbing ladders, and working in wet, cold, and warm environments
• Forklift certification or willingness to obtain one
• Flexible schedule, including early mornings
• Detail-oriented, safety-minded, and a genuine team player
