Key Responsibilities
The Corporate Chief Baker serves as the operational extension of the Princess Cruises corporate office, with a primary focus on bakery and culinary excellence across the fleet. This role ensures the consistent execution, quality, safety, and profitability of bakery and assigned culinary operations in alignment with corporate standards, budgets, and regulatory requirements.
  • The Corporate Chief Baker plays a critical leadership role in driving guest satisfaction, food quality, crew development, and compliance, while championing Princess Cruises' Core Values.
  • Ensure all assigned vessels fully comply with Company policies, USPH regulations, safety, environmental standards, and industry best practices.
  • Train shipboard bakery and galley teams on updated USPH requirements, equipment manuals, food safety procedures, and production standards.
  • Oversee proper use, care, and maintenance of bakery and galley equipment to maximize safety, efficiency, and equipment lifespan.
  • Partner with onboard F&B leadership and Technical teams to evaluate equipment condition and maintenance needs.
  • Ensure 100% compliance with Company recipes, execution methods, and presentation standards through tastings, supervision, and mise en place controls.
  • Monitor and control food costs, portioning, waste reduction, and product utilization to achieve assigned budget targets.
  • Verify that all food products received onboard meet purchasing specifications and ensure discrepancies are reported per company procedures.
  • Support OBR‑generating outlets to operate at profitable levels while maintaining brand standards.
  • Lead and support Executive Chefs and senior bakery leadership in performance management, appraisals, discipline, and ILO compliance.
  • Conduct formal training for bakery and galley positions in support of fleet succession planning.
  • Review shipboard performance appraisals and partner with onboard leadership to identify training and development needs.
  • Actively coach, mentor, and develop high‑potential team members across assigned ships and regions.
  • Maintain a professional and effective link between guests (while onboard), shipboard teams, and the corporate F&B office.
  • Champion Princess Cruises' Core Values and C.R.U.I.S.E. philosophy through daily leadership behaviors.
  • Anticipate guest needs, resolve food‑related concerns promptly, and support improvements in guest satisfaction scores.
  • Contribute to the development of new concepts, recipes, and initiatives that enhance guest experience and revenue.
  • Provide detailed post‑visit reports and formal summaries following each ship visit.
  • Deliver monthly regional and ship‑by‑ship performance summaries, including operational results, challenges, and improvement plans.
  • Maintain ongoing communication with assigned ships and shoreside leadership outside of ship visits to ensure alignment and consistency.

  • Excellent communication, reporting, and stakeholder management skills.
  • Willingness and ability to travel extensively and work onboard vessels globally.
