Position Summary

Prepare ingredients, recipes, sauces, and kitchen components accurately and consistently to ensure the culinary team is fully prepared for exceptional service.
Prep Cooks build the foundation for exceptional food by ensuring every ingredient is prepared with consistency, accuracy, and attention to detail after service begins. The quality of every dish begins long after the guest orders it.

  • Complete all assigned prep after service begins.
  • Prepare consistent recipes and portions that support exceptional food quality.
  • Maintain an organized, clean, and efficient prep kitchen.
  • Accurately label, date, and rotate products using FIFO procedures.

  • Ensure the culinary team is fully prepared for every service period.

Essential Duties & Responsibilities

Responsibilities include, but are not limited to:

  • Wash produce, chop vegetables, slice meats, portion proteins, prepare sauces, dressings, desserts, and batch recipes according to established recipes and standards.
  • Prepare ingredients accurately and consistently to support efficient kitchen operations.
  • Receive deliveries, organize walk-in coolers and dry storage, rotate inventory using FIFO, and properly label and date all products.
  • Maintain temperature logs, labeling, dating, allergen awareness, cross-contamination prevention, proper knife handling, and food safety standards.
  • Monitor ingredient quality, identify damaged or substandard products, notify the Executive Chef or Food & Beverage Director of concerns, and help reduce food waste.
  • Assist Line Cooks and Dishwashers/Stewards as business needs require.
  • Cross-train toward the Line Cook position while supporting overall kitchen operations.
  • Maintain clean, organized prep stations and equipment throughout the shift.
  • Complete opening, closing, cleaning, and additional operational duties as assigned.
Qualifications

Minimum Qualifications

  • Must be at least 18 years of age.
  • Ability to work evenings, weekends, holidays, and special events based on business needs.
  • Knowledge of basic knife skills and food preparation techniques or willingness to learn.
  • Positive attitude with a genuine passion for teamwork and culinary excellence.

Preferred Qualifications

  • Previous prep cook or commercial kitchen experience preferred.
  • Knowledge of food safety, sanitation, and proper food handling procedures.
  • Desire to continue developing culinary skills and grow into a Line Cook position.
Physical Requirements
  • Stand and walk for extended periods throughout the shift.
  • Frequently lift and carry up to 30 pounds.
  • Occasionally lift or move up to 75 pounds with assistance.
  • Bend, kneel, reach, push, pull, and safely operate commercial kitchen equipment.
  • Maintain a professional appearance while working in a fast-paced kitchen environment.
