We are looking for an ambitious industry professional eager to join own kitchen team for a locally-owned modern Italian concept, located in the Cool Springs area of Franklin, TN. This is a great opportunity for a creative and motivated natural leader who is passionate about pursuing their craft, outside of the complications and constraints of the corporate environment.

Chrysalis is a neighborhood focused Italian style trattoria that has established itself in the local community, since opening in 2021. The concept is upscale casual with a particular emphasis on it’s fresh ingredient scratch kitchen, which proudly does not utilize freezers, fryers or microwaves.

The Sous Chef role at Chrysalis is a hands on lead-by-example position, which involves working side-by-side with your team to deliver consistent high-quality execution.

Preferred Experience / Qualifications:

  • Minimum of two years proven leadership experience as a sous chef or kitchen manager
  • Excellent record of kitchen and staff management
  • Understanding of various cooking methods, ingredients, equipment and procedures
  • Proven record with implementing Food & Labor Cost Controls
  • Previous experience with Italian cuisine
  • Experience with catering
  • ServSafe certified
  • Experience placing and inspecting orders
  • Experience developing and executing a menu
  • Availability to work weekends (closed Sunday) and evenings (close by 10PM)
  • Must be able to lift 50+ lbs
  • Proficiency in Spanish
  • Eager to lead and take accountability and responsibility

Responsibilities:

  • Planning and implementing new menu items
  • Helping to conduct daily, weekly and monthly inventory
  • Ensuring that food prep and storage areas meet health and safety standards
  • Maintaining quality, order and discipline
  • Ability to follow established recipes
  • Ability to train support staff to follow recipes and rules/regulations
  • Ability to successfully operate all stations in the kitchen
  • Ensuring thorough cleaning schedule
  • Punctuality, reliability and accountability

  • Owning and maintaining own knives
