Job description

We are seeking an exceptional Vice President of Operations to lead the operational strategy, execution, and performance of two of Las Vegas' most iconic restaurant brands.

This executive will be responsible for protecting the legacy of both brands while building the operational systems, leadership teams, and infrastructure necessary to support disciplined growth. The position requires a hands-on operator who thrives in an entrepreneurial, founder-led environment and understands both high-volume casual dining and upscale hospitality.

This is a highly hands-on leadership position. The Vice President is expected to spend the majority of their time inside the restaurants, coaching teams, developing leaders, improving operations, ensuring exceptional guest experiences, and driving financial performance. The successful candidate leads from the field—not from an office.
This position is based in Las Vegas, Nevada, where both brands currently operate. Candidates must currently reside in the Las Vegas area.

Key Responsibilities for Vice President of Operations:
Operational Leadership:
  • Provide executive leadership for the day-to-day operations.
  • Build a culture centered on hospitality, accountability, operational excellence, and execution.
  • Establish operating standards that consistently deliver exceptional guest experiences.
  • Ensure operational consistency across all locations while preserving the unique identity of each brand.
  • Continuously improve restaurant systems, processes, and operating efficiency.

Financial Leadership:
  • Drive sales growth, restaurant profitability, and EBITDA performance.
  • Own restaurant P&Ls and operating budgets.
  • Improve labor productivity, food cost, purchasing controls, and overall operating margins.
  • Analyze financial performance and implement action plans that improve results.

Leadership & Talent Development:
  • Recruit, develop, and retain exceptional restaurant leaders.
  • Coach General Managers and management teams through regular field visits and hands-on leadership.
  • Build a culture of accountability, ownership, and continuous improvement.
  • Develop succession plans and identify future operational leaders.

Guest Experience:
  • Champion world-class hospitality throughout both brands.
  • Continuously evaluate guest satisfaction, food quality, cleanliness, speed of service, and operational execution.
  • Identify opportunities to elevate the guest experience while preserving the heritage and personality of each brand.

Training & Operational Systems:
  • Develop scalable operating systems that support continued growth.
  • Improve training programs, onboarding, and leadership development.
  • Standardize best practices while maintaining each brand's unique operating culture.
  • Ensure operational excellence is consistently executed across all shifts.

Food Safety & Compliance:
  • Maintain the highest standards of food safety, sanitation, and regulatory compliance.
  • Ensure compliance with HACCP, OSHA, Southern Nevada Health District regulations, and company standards.
  • Oversee operational audits and corrective action programs.

Growth & New Restaurant Openings:
This executive will lead all operational aspects of new restaurant openings, including:
  • Operational planning.

  • Pre-opening readiness.
  • Grand opening execution.
  • Post-opening operational support.

The Vice President will build the operational foundation necessary to support disciplined multi-unit growth.
