Role Overview
A high-volume, Michelin-listed fine dining Italian concept generating $3M in annual revenue in Downtown, Boulder, CO 80302 is seeking a hands-on, polished General Manager to direct daily operations. Operating exclusively for dinner service, this 110-seat restaurant featuring 20 bar seats serves scratch-made pasta, an extensive Italian wine selection, and late-night live music/DJ programming (10:00 PM – 12:00 AM) catering to an upscale clientele. The General Manager will oversee a 40-person team, collaborate with a 31-year-old Executive Chef, and report directly to independent owner-operators.


Key Responsibilities

  • Execute high-touch floor management during dinner-only service, managing guest flow for nightly covers ranging from 80 to 200+.
  • Direct, schedule, and mentor a 40-person front-of-house staff while maintaining a high-standard workplace culture.
  • Manage administrative workflows, labor control, and operational reporting using Toast POS and Restaurant365.
  • Oversee late-night lounge transitions featuring live music and DJ sets from 10:00 PM to 12:00 AM.
  • Partner closely with the Executive Chef and independent owners to align front-of-house operations with culinary and brand standards.


Required Experience & Qualifications

  • Prior General Manager experience in upscale fine dining or Michelin-listed restaurant environments.
  • Deep product knowledge of regional Italian cuisine, homemade pasta, and Italian wine pairings.
  • Working proficiency with Toast POS and Restaurant365 (R365) software platforms.
  • Proven background managing operations for concepts with $3M+ in annual revenue.
  • Demonstrated capability in leading operations within an independent, owner-operated structure.


Mandatory Non-Negotiables

  • Hands-on leadership experience within upscale or fine-dining Italian restaurant concepts.
  • Technical proficiency in Toast POS and Restaurant365 (R365).
  • Availability to work dinner service, late nights (including 10:00 PM – 12:00 AM shift coverage), and weekends.


Compensation & Benefits

  • Base Salary Range: $100,000 – $120,000 per year
  • Working Hours: Full-time, dinner-only schedule
