About the Role

Hot Chix is seeking an Assistant Kitchen Manager to lead kitchen operations during

assigned shifts and ensure consistent execution of food quality, speed, cleanliness, food

safety, and customer service standards.


The Assistant Kitchen Manager reports to the Kitchen Manager and serves as the

primary leader of Hot Chix during assigned shifts. This is a hands-on management

position that requires active involvement in kitchen operations while also directing

employees and maintaining control of the shift.


The ideal candidate is organized, dependable, comfortable leading a team, and able to

maintain urgency and consistency in a fast-paced kitchen environment.


What You'll Be Responsible For

Shift Leadership

  • Take responsibility for Hot Chix operations during assigned shifts.
  • Direct kitchen employees and assign positions based on business volume and operational needs.
  • Adjust employee deployment as customer volume and ticket flow change.
  • Ensure required opening, closing, preparation, cleaning, and shift tasks are completed.
  • Maintain effective communication with employees and other members of management.
  • Complete accurate shift handoffs and communicate unresolved issues to the Kitchen Manager.
  • Escalate significant staffing, inventory, equipment, food-safety, or operational concerns when appropriate.

Employee Supervision

  • Provide employees with clear direction and expectations throughout the shift.
  • Maintain urgency and productivity during both peak and slower operating periods.
  • Coach employees when food quality, speed, cleanliness, food safety, or performance standards are not being met.
  • Support the training and development of new and existing team members.
  • Address routine attendance, conduct, and performance concerns during the shift.
  • Document significant employee issues and communicate them to the Kitchen Manager.
  • Lead by example in professionalism, teamwork, cleanliness, and execution.

Food Quality

  • Ensure all food is prepared according to Hot Chix recipes and operating standards.
  • Monitor portion sizes, appearance, temperature, and product consistency.
  • Verify proper cooking and preparation procedures.
  • Correct quality problems immediately.
  • Prevent products that do not meet company standards from being served.
  • Reinforce proper station procedures with kitchen employees.
  • Notify the Kitchen Manager of recurring quality issues.

Speed of Service & Production

  • Monitor ticket flow and maintain appropriate speed of service.
  • Position employees effectively during high-volume periods.
  • Identify and respond to production bottlenecks.
  • Maintain appropriate prep and product levels throughout the shift.
  • Adjust production based on actual customer demand.
  • Ensure speed does not compromise food quality or food safety.
  • Communicate significant product shortages or production issues promptly.

Food Cost & Waste Execution

  • Enforce portion and recipe standards during assigned shifts.
  • Monitor product usage and prevent unnecessary overproduction.
  • Ensure waste is properly recorded.
  • Identify unusual or excessive waste.
  • Communicate recurring waste or portioning concerns to the Kitchen Manager.
  • Follow established procedures designed to protect food cost.

The Assistant Kitchen Manager is responsible for executing food-cost controls during

the shift, while the Kitchen Manager remains accountable for overall food-cost

performance.

Food Safety & Sanitation

  • Ensure employees follow all required food-safety procedures.
  • Complete required temperature checks, sanitation logs, and other food-safety documentation.
  • Ensure products are properly labeled, dated, stored, and rotated.
  • Monitor proper handwashing, glove use, sanitation, and food-handling practices.
  • Correct food-safety concerns immediately.
  • Maintain clean and sanitary food-contact surfaces.
  • Escalate significant food-safety concerns to the Kitchen Manager.
  • Maintain an inspection-ready kitchen throughout the shift.

Kitchen Cleanliness

  • Maintain a clean and organized kitchen throughout the shift.
  • Assign cleaning responsibilities to employees.
  • Follow up to ensure assigned cleaning tasks are completed.
  • Maintain standards for cooking equipment, prep areas, storage areas, floors, sinks, dishes, and food-contact surfaces.
  • Ensure spills, trash, and cleanliness issues are addressed promptly.
  • Ensure closing cleaning procedures are completed thoroughly when assigned.
  • Leave the kitchen properly prepared for the next shift.

Inventory Product Availability

  • Monitor food, packaging, and supply levels during the shift.
  • Notify the Kitchen Manager of low inventory or potential shortages.
  • Receive deliveries when assigned and verify products are properly stored.
  • Maintain proper product rotation.
  • Assist with inventory counts when directed.
  • Keep storage areas clean and organized.

The Assistant Kitchen Manager does not normally determine overall inventory levels or

place routine food orders unless specifically delegated by the Kitchen Manager.

Customer Experience

  • Ensure orders are prepared accurately and consistently.
  • Support fast and professional service.
  • Address routine food-quality or order concerns.
  • Resolve customer issues within the authority of the position.
  • Escalate serious or recurring customer concerns when appropriate.
  • Maintain standards that encourage customer satisfaction and repeat visits.

Opening & Closing Responsibilities

When assigned, the Assistant Kitchen Manager will:

  • Complete required opening or closing checklists.
  • Verify proper food preparation and product readiness.
  • Complete required food-safety and temperature documentation.
  • Ensure food is properly stored, labeled, and secured.
  • Ensure equipment is properly started up, shut down, or cleaned.
  • Verify all cleaning and sanitation tasks are completed.
  • Communicate important operational issues to the Kitchen Manager or incoming management team.

  • Reliable and capable of making sound decisions during assigned shifts.

  • Dependable attendance and punctuality.
  • ServSafe or equivalent food-safety certification is a plus, or ability to obtain certification if required.

Schedule & Availability

This is a full-time management position requiring flexible availability.

Assistant Kitchen Managers may be scheduled for opening, mid, or closing shifts and

must be available to work a combination of weekdays, evenings, weekends, and

holidays based on business needs.


Reliable attendance is essential because the Assistant Kitchen Manager is responsible

for leading Hot Chix operations during assigned shifts.


Physical Requirements

This is an active, hands-on kitchen management position.

The role may require:

  • Standing and walking for extended periods.
  • Regular bending, reaching, lifting, and movement throughout the kitchen.
  • Working around hot cooking equipment.
  • Working in refrigerated or freezer areas for short periods.
  • Lifting and carrying up to [50] pounds.
