General Manager – Job Summary

As a General Manager, you are the face of Capriotti’s. You’ll ensure that every guest receives outstanding quality and service—hot food served hot, cold food served cold, everything fresh, and all delivered with a smile in a clean, welcoming environment.
General Manager Responsibilities

  • Build high-performing teams by recruiting, hiring, and retaining top talent.
  • Coach, train, and develop team members following Capriotti’s standards.
  • Create team schedules focused on operational excellence, cost control, and guest satisfaction.
  • Model and maintain Capriotti’s culture of CAPtivating Service.
  • Ensure compliance with health and safety standards.
  • Prepare all products according to Capriotti’s recipes and portion guidelines.
  • Maintain recipe integrity for a consistent guest experience across locations.
  • Manage cash handling and bank deposits.
  • Monitor budgets, cost of goods, labor, payroll, and all financial metrics.
  • Promote salesmanship, including suggestive selling and strong counter-service habits.
  • Manage purchasing, inventory, receiving, and waste control.
  • Participate in both brand-wide and local marketing initiatives.
  • Communicate effectively with team members, guests, vendors, and leadership.
  • Foster a culture of trust and collaboration within the shop.
  • Demonstrate emotional resilience and adaptability under pressure.
  • Analyze information to make sound operational decisions.
Qualifications – Skills & Knowledge

  • Service Orientation: Actively seeks opportunities to support guests and team members.
  • Time Management: Able to multitask and stay hands-on during busy shifts while maintaining focus on quality and performance.
  • Technology Proficiency: Experience with POS systems and basic computer skills (email, spreadsheets, documentation).
Physical Requirements

  • Ability to work in environments ranging from below 0°F to above 100°F.
  • Ability to stand, walk, and move throughout the food truck for extended periods.
  • Ability to lift up to 50 lbs. up to 10 feet.
  • Ability to balance and move up to 25 lbs. for distances up to 50 feet.
