Core Responsibilities
  • Prepare a full range of sushi offerings (including sashimi, nigiri, and maki rolls) with precision, consistency, and adherence to Vandelay's culinary standards.
  • Fabricate and portion fish accurately, ensuring premium quality, freshness, and proper handling at all times.
  • Ensure all sushi dishes are crafted with the highest-quality ingredients and presented with exceptional attention to detail.
  • Maintain a clean, organized, and fully stocked sushi station throughout prep and service.
  • Adhere to all food safety, health, and sanitation guidelines, ensuring a pristine and compliant work environment.
  • Monitor product levels, assist with inventory management, and communicate ordering needs to maintain proper stock.
  • Collaborate closely with the kitchen team and leadership to support a seamless flow of service and proper pacing.
