What is a sourdough baker?

A sourdough baker is a professional who specializes in making bread and other baked goods using sourdough, a natural leavening agent made from fermented flour and water. Sourdough bakers manage the fermentation process, maintain starter cultures, and craft recipes that rely on wild yeast and bacteria instead of commercial yeast. Their expertise involves understanding the science of fermentation, dough handling, and baking techniques to produce flavorful and textured bread distinctive to sourdough.

What are some common challenges faced by professional sourdough bakers, and how can they be addressed?

Professional sourdough bakers often face the challenge of maintaining consistency in their bread due to variables like temperature, humidity, and the natural fluctuations of a live starter. To address this, bakers carefully monitor and adjust fermentation times, hydration levels, and starter feedings. Communication within the bakery team is essential to ensure that everyone follows the same processes and standards. Over time, bakers develop intuition and troubleshooting skills to adapt recipes and techniques, leading to more reliable results and better quality bread.
