What is a sourdough baker?

A sourdough baker is a professional who specializes in making bread and other baked goods using sourdough, a natural leavening agent made from fermented flour and water. Sourdough bakers manage the fermentation process, maintain starter cultures, and craft recipes that rely on wild yeast and bacteria instead of commercial yeast. Their expertise involves understanding the science of fermentation, dough handling, and baking techniques to produce flavorful and textured bread distinctive to sourdough.

What are some common challenges faced by professional sourdough bakers, and how can they be addressed?

Professional sourdough bakers often face the challenge of maintaining consistency in their bread due to variables like temperature, humidity, and the natural fluctuations of a live starter. To address this, bakers carefully monitor and adjust fermentation times, hydration levels, and starter feedings. Communication within the bakery team is essential to ensure that everyone follows the same processes and standards. Over time, bakers develop intuition and troubleshooting skills to adapt recipes and techniques, leading to more reliable results and better quality bread.

San Diego, CA • On-site

$20 - $25/hr

Part-time

Job description

Swells Sourdough Bakery is a San Diego craft bakery built on organic ingredients and slow-fermented sourdough. We run booths at the Little Italy Mercato (Saturdays) and La Jolla Open Aire Market (Sundays), and we’re hiring a dependable weekend associate to help us sell great bread and take care of our customers.

If you love good food, enjoy talking to people, and can handle an early start, you’ll fit right in. You’ll work alongside our market team, not on your own, and you’ll be one of the faces of Swells at the booth, so a warm attitude counts as much as showing up on time.

What you’ll do:

Set up and break down the booth (tent, tables, displays, product)

Sell bread and pastries, run the POS, handle cash and card

Greet customers, answer questions, offer samples

Keep the booth clean, stocked, and looking sharp

Drive our vehicle to and from the markets and help load in and out

What you’ll need:

Available both Saturdays and Sundays, early mornings included

Valid driver’s license and a clean driving record

Able to lift 40 lbs and stay on your feet through the shift

Punctual, reliable, and friendly with customers

Comfortable working outdoors in any weather

Bonus points for retail, food service, or farmers market experience, and for a real interest in baking or local small business.
