Job Description

The Captain Server is a lead service position responsible for delivering polished, knowledgeable, and personalized service while providing floor-level leadership and support to the Server team. The Captain Server will oversee assigned dining areas or service sections, assist with coordinating service flow, mentor and support Servers, and ensure Delmonico Steakhouse standards are consistently executed. 

The ideal candidate is an experienced hospitality professional with strong fine-dining knowledge, exceptional communication skills, and the confidence to lead by example. This individual should possess a deep understanding of food, wine, spirits, and steakhouse service while demonstrating the ability to anticipate guest needs and maintain composure in a fast-paced environment.

Responsibilities:

  • Lead by example in delivering warm, polished, professional, and personalized service consistent with Delmonico Steakhouse and Fairmont New Orleans standards
  • Serve as a floor-level leader and resource for Servers, Server Assistants, Food Runners, and other Front of House colleagues
  • Support the Restaurant Management team in maintaining service standards, operational efficiency, and exceptional guest experiences
  • Oversee assigned dining areas or service sections and ensure all steps of service are executed consistently and accurately
  • Assist in coordinating the timing and flow of service between the Front of House and Culinary teams
  • Maintain strong communication with the Chef, Sous Chefs, Managers, Servers, and support staff throughout service 
  • Assist Servers with challenging service situations, guest requests, VIP experiences, and special occasions
  • Step into service as needed to support the team and ensure seamless guest experiences during high-volume periods 
  • Maintain comprehensive knowledge of the Delmonico Steakhouse menu, including premium cuts of beef, preparation methods, temperatures, sauces, garnishes, accompaniments, ingredients, and daily offerings 
  • Demonstrate strong knowledge of wine, champagne, spirits, cocktails, and appropriate food and beverage pairings 
  • Confidently guide guests through menu selections and provide thoughtful recommendations based on individual preferences 
  • Demonstrate detailed knowledge of steak cuts, aging processes, cooking temperatures, preparation techniques, and appropriate accompaniments
  • Maintain knowledge of Chef Emeril Lagasse's culinary philosophy and the New Orleans influences represented throughout the Delmonico Steakhouse experience
  • Ensure food and beverage service is properly paced, presented, and coordinated throughout the guest experience
  • Monitor assigned tables and proactively anticipate guest needs before they are expressed
  • Conduct table visits and monitor guest satisfaction throughout the dining experience
  • Assist with guest recovery by addressing concerns professionally and involving management when appropriate 
  • Assist with VIP, celebrity, repeat guest, special occasion, and high-profile dining experiences with discretion and attention to detail
  • Support the training, coaching, and development of Servers and other Front of House colleagues
  • Share product knowledge, service techniques, and best practices with team members
  • Assist new colleagues in learning Delmonico Steakhouse standards, steps of service, menu knowledge, and operational procedures
  • Conduct or assist with pre-shift briefings, menu presentations, tastings, and service meetings as directed by management
  • Help ensure the team is properly prepared for service, including table setup, side work, station readiness, menus, service equipment, and supplies 
  • Assist with table assignments, section organization, and service coordination as directed
  • Verify food orders for accuracy, presentation, temperature, and special requests prior to delivery when appropriate
  • Coordinate closely with Food Runners and Server Assistants to ensure timely and accurate food delivery 
  • Maintain a clean, organized, and polished dining environment throughout service 
  • Ensure proper clearing, resetting, and presentation of tables according to Delmonico Steakhouse standards
  • Follow all food safety, sanitation, responsible alcohol service, and workplace safety policies and procedures
  • Accurately process guest checks, payments, and cash transactions in accordance with established procedures 
  • Maintain knowledge of Fairmont New Orleans amenities, services, dining outlets, events, and local attractions to assist guests
  • Support opening and closing procedures, side work, inventory, and other operational responsibilities as assigned 
  • Communicate operational concerns, guest feedback, service issues, and opportunities for improvement to leadership
  • Maintain a polished and professional appearance consistent with Fairmont New Orleans and Delmonico Steakhouse standards
  • Demonstrate professionalism, discretion, accountability, teamwork, and a genuine commitment to hospitality
  • Uphold the culinary and hospitality standards associated with Chef Emeril Lagasse, Delmonico Steakhouse, and Fairmont New Orleans 
  • Perform additional duties as assigned
Qualifications
  • Minimum three years of Server experience in an upscale, fine-dining, luxury hotel, or high-volume restaurant environment preferred
  • Previous experience in a lead server, captain, senior server, or similar leadership position strongly preferred 
  • Luxury hotel, fine-dining, or premium steakhouse experience preferred 
  • Extensive knowledge of food, wine, spirits, cocktails, and elevated service standards
  • Strong knowledge of premium steakhouse cuisine, beef cuts, preparation methods, and cooking temperatures preferred 
  • Strong wine and food pairing knowledge preferred 
  • Previous experience training, mentoring, or supporting the development of other service colleagues
  • Excellent verbal and written communication skills
  • Strong interpersonal and leadership skills with the ability to coach and influence through positive example
  • Ability to confidently interact with discerning clientele, VIPs, repeat guests, and hotel guests. 
  • Strong organizational and multitasking abilities 
  • Exceptional attention to detail and ability to manage multiple tables and priorities simultaneously
  • Ability to remain composed, polished, and professional during high-volume service
  • Strong problem-solving and guest recovery skills
  • Previous experience with Micros or comparable POS systems preferred; training will be provided
  • Current alcohol awareness certification preferred
  • Ability to work flexible schedules, including evenings, weekends, holidays, and extended shifts as operationally required 
  • Must be legally authorized to work in the United States
  • Must possess or be able to obtain required Louisiana food safety certifications
