Position Summary:
Responsible for portion and merchandising all seafood.
Essential Functions:
  • Works with supervisors and production managers to schedule production.
  • Cleans, trims, and debones products for future processing.
  • Inspects and removes defects, bruises, or blemishes from the product.
  • Separates meats and by-products into specified containers and seals containers as needed.
  • Uses knives, cleavers, or other equipment to perform trimming.
  • Weighs product and tag containers for weight and contents.
  • Reduces processing costs but accurately cuts and sizes portions with good yields and meets customer specs.
  • Accurately reads and comprehends all customer-specific instructions.
  • Perform quality control checks and communicate with supervisors and managers regarding any defects.
  • A fish cutter must follow and maintain all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations and ensure all employees under their department follow all the regulations.
  • Maintaining cleanliness and hygiene of the work area and the cutting knives and equipment.
  • Perform any other duties as required.

Knowledge / Skills / Abilities:
  • Must have working knowledge of production equipment.
  • Demonstrated ability to portion all seafood product in an accurate and timely manner.
  • Ability to reduce processing costs by cutting and sizing portions accurately with good yields as well as meeting customer specs.
  • Ability to problem solve in terms of trimming and product substitutions.
  • Ability to work in a fast paced, high pressure, challenging environment
  • Must be a team player and possess a positive attitude.
  • Ability to effectively communicate, both written and verbally, in English.
  • Follows company's Quality Control procedures.

Educational & Experience Requirements:
  • High School or equivalent required.
