Job description

The Retort Operator responsibilities include operating FMC rotary sterilizers, continuously monitoring critical control points, especially time an temperatures. Assuring that the finished products meets all thermal process requirements. Monitor equipment to assure that is operating within the expected parameters. Check sterilized samples for flavor, grain and texture throughout the process to be certain that all finished product is commercially acceptable. Employees shall follow all the plant safety and quality rules, report incidents & unsafe conditions immediately and maintain compliance with regulations.
PRIMARY RESPONSIBILITIES:
  1. To operate machinery, monitor critical control points and record required information at prescribed intervals
  2. Start up machinery and run pilot samples to check for product heat stability prior to sterilizing.
  3. To shutdown machinery, fill out all logs recorder charts and other records
  4. Lubricate all equipment, clean the work area including all equipments, floors and wall, boil out sterilizers
  5. To maintain test for proper chlorine concentrations in process cooling water
  6. Complete sensory on all finished goods and rework
  7. Check initial temperature of every mix
  8. Perform boilout/ logout procedures and thermometer check procedures
  9. To determine quantity of stabilizer to be added if necessary
  10. Perform SAP transactions as necessary

*Must have a basic understanding of computers in order to operate equipment and to perform SAP transactions
