Job Description:

Overview

  • Provides Food & Beverage Management quantifiable information with regard to expenditures, labor, revenue/room covers, etc., needed for proper forecasting and budgeting.
  • Efficiently schedules projects so as to meet all required deadlines.
  • Ensures all department revenue reports are accurate prior to submittal to management.
  • Evaluates business forecasts and assists department management determining adjusting staff hours/days of operation and supply ordering.
  • Ensures all financial records for the department are accurately maintained and updated on a timely basis.
  • Maintain a good working relationship with all outlet managers and food & beverage team.
  • Participate in financial training for restaurant managers.
  • Remain abreast of any changes in the food & beverage environment, including labor and systems.
  • Holds outlet leaders accountable for maintaining inventory, payroll, and cost controls.
  • Works to accomplish departmental goals, strategies, and objectives ensuring quality products and exemplary guest service while maintaining budgetary profit margins.
  • Supervises the restaurant management team and delegates assignments and duties.
  • Uses the Info data analysis program to monitor employee sales performance.

Responsibilities

  • Monitors training of Management as well as line level team.
  • Develops and updates policies and procedures for food and beverage staff.
  • Reviews all guest service evaluations and other feedback from the Customer Relations department and resolves customer complaints and service deficiencies to ensure guest's faith in company has been restored.
  • Performs routine inspections of all restaurants and is on the floor during key result times.
  • Maximizes employee morale through leading by example.
  • Interview, hire, commend, discipline and/or terminate restaurant management and, if necessary, hourly employees, in compliance with established policies and procedures.
  • Attends departmental meetings and administrative hearings as required and conducts weekly meetings with restaurant management team.

Qualifications

  • Excellent communication skills, both written and oral.
  • Excellent analytical and evaluation skills.
  • Flexibility in work schedule.
