Job description

POSITION SUMMARY:
The Pastry Cook will produce a variety of baked goods for various dining and retail outlets on property.
ESSENTIAL FUNCTIONS:
  • Measure, weigh, and prepare ingredients accurately
  • Knead, roll, cut, and prepare dough
  • Monitor oven temperatures, speed settings, mixing machines, and other baking equipment
  • Monitor food items during the baking process
  • Decorate, glaze, apply icing, and prepare toppings for baked goods
  • Train new staff on company philosophies, practices, and products
  • Evaluate food ingredients for quality
  • Operate slicing, cutting, and wrapping equipment while observing consistently all company mandatory safety regulations
  • Create new recipes, incorporating locally milled flours, regional produce and seasonal products as part of menu development
  • Ensure food surfaces and baking equipment meet all health and safety standards
  • Clean and maintain baking equipment, utensils, and tools
  • Order and receive supplies and materials as needed
  • Coordinate deliveries with Executive Chef and Purchasing department
  • Perform other tasks as assigned

EXPERIENCE/QUALIFICATIONS:
  • Minimum Degree Required: High School Diploma or Equivalent
  • Preferred Degree: Trade, Tech or Vocational Education in Culinary Arts - Baking & Pastry (if applicable)
  • Certificate(s) or License(s): ServSafe Food Handler Certification
  • Years of experience: 3-5

KNOWLEDGE, SKILLS, AND ABILITY:
  • Passionate, team-oriented baker with a strong work ethic and an independent, can-do attitude
  • Willingness to learn new skills and be a team player
  • Solid background in dough, including but not limited to breads, pizzas, pastries, cakes and sauces with the knowledge of cake decorating techniques. Duties will range from creative to redundant with medium to large volume baking on a daily basis.
  • Knowledgeable of kitchen baking equipment and its safe and efficient operation
  • Ability to deal effectively with customers and other company personnel and work with others proficiently in a close environment with speed and efficiency
  • Ability to assess the quality of products and adjust preparation to maintain consistency and guest satisfaction
  • This individual should be interested in producing artisanal quality bread and is forward thinking in his/her craft.
