Position Summary
Johnson’s Meat & Seafood Market is seeking an experienced Seafood Associate with strong seafood cutting, crab grading, steaming, and customer service skills. The ideal candidate must be knowledgeable in handling a wide variety of fresh fish and shellfish, operating commercial seafood equipment safely, maintaining department cleanliness, and delivering excellent customer experiences.
Seafood Preparation & Cutting
• Cut, fillet, portion, and prepare a variety of fish including salmon, snapper, catfish, tilapia, grouper, whiting, mullet, tuna, trout, king fish, and other seafood products.
 • Properly scale, skin, trim, and debone fish.
 • Maintain attractive seafood displays and ensure proper product rotation using FIFO methods.
 • Monitor freshness, quality, and temperatures throughout the shift.
 • Package and label seafood products accurately.
Crab & Shellfish Handling
• Grade live blue crabs by size and quality.
 • Handle live seafood properly while minimizing loss.
 • Sort shrimp, oysters, crab legs, crawfish, and shellfish products.
 • Maintain holding tanks and seafood display areas according to company standards.
Commercial Steamer Operations
• Operate commercial seafood steamers safely and efficiently.
 • Steam blue crabs, snow crabs, shrimp, oysters, crawfish, and lobster.
 • Season and prepare seafood according to customer requests and company recipes.
 • Monitor steaming times, temperatures, and product quality.
 • Clean and sanitize steamers and cooking equipment daily.
Customer Service
• Assist customers with seafood selections and cooking recommendations.
 • Provide excellent hospitality and professional service.
 • Take special orders and prepare custom seafood requests.
 • Maintain a positive attitude in a fast-paced environment.
Food Safety & Sanitation
• Follow all HACCP, FDA, OSHA, and company food safety procedures.
 • Maintain proper cold-chain temperatures.
 • Properly clean and sanitize seafood equipment and preparation areas.
 • Maintain a clean, organized, and safe seafood department.
Qualifications
• Minimum 2 years seafood market or seafood restaurant experience preferred.
 • Experience cutting multiple varieties of fish required.
 • Experience grading live blue crabs preferred.
 • Experience operating commercial seafood steamers required.
 • Strong knife skills and seafood product knowledge.
 • Ability to lift 50+ pounds consistently.
 • Weekend and holiday availability required.
