Job Summary:
The Head Pastry Chef is responsible for leading the pastry program and maintaining the quality, consistency, and presentation of all pastry items produced by the bakery. This role provides direction for the pastry team, supports product development, and works closely with bakery leadership to maintain high standards that reflect the bakery's artisan approach. The Head Pastry Chef helps guide the pastry team while supporting an organized and efficient production environment.
Role & Responsibilities
• Lead the pastry program, including viennoiserie, desserts, and specialty pastry items.
• Develop and refine recipes while maintaining consistent product quality and presentation.
• Introduce seasonal pastry items that align with the bakery's concept and standards.
• Guide and support pastry team members including pastry chefs, pastry cooks, and assistants.
• Assist with hiring, training, and mentoring pastry staff.
• Maintain a professional and collaborative work environment.
• Coordinate pastry production to support daily bakery operations and special orders.
• Monitor product quality and presentation during production.
• Monitor ingredient usage and communicate ordering needs with leadership.
• Support efforts to minimize waste and maintain efficient ingredient usage.
• Follow health department regulations and food safety standards.
• Maintain a clean and organized pastry production environment.
Requirements
• Strong knowledge of pastry techniques including laminated doughs, desserts, and viennoiserie.
• Experience with recipe development and seasonal pastry offerings.
• Strong organizational and communication skills.
• Ability to stand for extended periods of time.
• Ability to lift and carry up to 50 pounds.
• Ability to work early morning, evening, weekend, or holiday shifts as required.
