THE OPPORTUNITY:

Oak Quarry Golf Club is the most acclaimed golf course in Southern California. Located at the historic Jensen Quarry in Jurupa, Oak Quarry features a 7,200 square-foot clubhouse, full-service restaurant, and event space. Join the Oak Quarry Golf Club staff and work alongside our Executive Chef and culinary team to launch dinner service at Oak Quarry.

THE ROLE:

As a BBQ Pit Crew member specializing in live fire smoking and managing the firebox of an offset smoker, you will be responsible for overseeing the entire smoking process to ensure the production of high-quality barbecue dishes. This role requires expertise in fire management, precise temperature control, and a deep understanding of traditional barbecue techniques.

Responsibilities:

  • Fire Management: Monitor and maintain the firebox of the offset smoker to achieve and sustain optimal cooking temperatures and smoke levels.

  • Smoking Techniques: Utilize expert knowledge of smoking techniques to impart desired flavors and textures to a variety of meats, including brisket, ribs, pork shoulder, and chicken.

  • Temperature Control: Regularly monitor and adjust airflow, fuel (wood or charcoal), and fire size to control the heat inside the smoker and ensure consistent cooking results.

  • Meat Preparation: Prepare meats for smoking, including trimming, seasoning, and ensuring they are ready for the smoker according to established recipes and procedures.
