Position Summary

We are seeking an experienced, creative, and highly organized Pastry Sous Chef to join our award-winning pastry team. This is an opportunity to work alongside some of the industry's most talented chefs while helping create refined desserts, breads, mignardises, and specialty pastry items that reflect the innovation and excellence synonymous with the Wolfgang Puck name.

What You'll Do

  • Assist the Executive Pastry Chef in leading the daily operations of the pastry department.
  • Prepare and execute seasonal desserts, plated desserts, breads, viennoiserie, mignardises, and specialty pastry items with exceptional attention to detail.
  • Maintain Wolfgang Puck Fine Dining Group standards for quality, consistency, presentation, and execution.
  • Train, mentor, and develop pastry cooks while fostering a positive and collaborative team culture.
  • Assist with recipe development, menu changes, and seasonal offerings.
  • Ensure proper product rotation, inventory management, and ordering.
  • Maintain the highest standards of food safety, sanitation, and kitchen organization.
  • Collaborate with the culinary team to create memorable guest experiences.
  • Lead by example during service while maintaining composure in a high-volume, luxury dining environment.

What We're Looking For

  • 3+ years of pastry experience in an upscale or Michelin-level restaurant, luxury hotel, or comparable fine dining environment.
  • Previous leadership experience as a Pastry Sous Chef, Lead Pastry Cook, or similar role.
  • Strong knowledge of classical and modern pastry techniques.
  • Experience with plated desserts, chocolate work, breads, laminated doughs, ice creams, petits fours, and mignardises.
  • Excellent organizational, communication, and leadership skills.
  • Ability to multitask and perform under pressure while maintaining exceptional quality.
  • A passion for continuous learning, creativity, and hospitality.
