Pastry Cook
Department: Culinary
Reports To: Executive Chef / Executive Sous Chef
Status: Full-Time Hourly, Non-Exempt
Position Summary
The Pastry Cook is responsible for preparing high-quality baked goods, pastries, desserts, and specialty items that meet the luxury standards of the InterContinental Minneapolis - St. Paul Airport. This position supports all food and beverage outlets, banquets, meetings, and special events by producing consistent, visually appealing products while maintaining the highest standards of food safety, sanitation, and quality.
Essential Job Functions
  • Prepare a variety of pastries, desserts, breads, cookies, cakes, muffins, and other baked goods according to standardized recipes.
  • Assist with the daily production of desserts for the restaurant, room service, executive lounge, banquets, catering, and special events.
  • Measure, mix, bake, decorate, and finish pastry items with attention to quality and presentation.
  • Maintain consistency in flavor, appearance, and portion size.
  • Properly store, label, and rotate products using FIFO (First In, First Out) procedures.
  • Assist with decorating cakes, pastries, and plated desserts as assigned.
  • Prepare ingredients and complete daily production lists to support hotel operations.
  • Maintain a clean, organized, and sanitary work area at all times.
  • Follow all food safety, sanitation, and HACCP guidelines.
  • Operate bakery and pastry equipment safely and according to manufacturer specifications.
  • Monitor product quality and notify supervisors of any shortages or quality concerns.
  • Assist with receiving, stocking, and organizing pastry ingredients and supplies.
  • Work collaboratively with the culinary team to ensure timely completion of all production needs.
  • Maintain compliance with company policies, safety procedures, and grooming standards.
  • Perform other duties as assigned to support the Culinary Department.

Qualifications
  • Previous pastry, bakery, or culinary experience preferred.
  • Culinary or Baking & Pastry education is a plus but not required.
  • Basic knowledge of baking techniques, pastry preparation, and dessert production.
  • Ability to follow recipes accurately and maintain consistent quality.
  • Strong attention to detail and organizational skills.
  • Ability to work efficiently in a fast-paced environment.
  • Dependable with a positive attitude and strong work ethic.
  • Ability to work independently and as part of a team.
  • Flexible schedule, including early mornings, evenings, weekends, and holidays.

Physical Requirements
  • Stand and walk for extended periods throughout the shift.
  • Frequently lift and carry up to 50 pounds.

  • Work safely around hot ovens, mixers, sharp tools, and refrigerated storage areas.
