Description
The Steward maintains a clean and safe work environment for all food and beverage operation. Maintains all china, glass and silver including all equipment in top sanitary conditions. Maintains all storage areas of food and nonperishable items in an orderly fashion. Maintains a high standard of sanitation utilizing good judgment in a timely manner. Proper knowledge of all dish machine operation. Ability to work in high temperatures. Ability to work in wet conditions and practice safety. Ability to adjust to high volume of business at any given time to complete all assigned task.

Essential Duties & Responsibilities:
  • Maintain a clean and safe environment through the daily operation.
  • Assemble and disassemble all dish machines with good safe practice.
  • Rotate all food and nonperishable items in a timely manner.
  • Clean and store all china, glass and silver into its properly designated area for all banquet and restaurant operations.
  • Scrape all food debris off the china before sanitizing.
  • Soak flatware in its proper chemical to assure cleanliness and non-spotting.
  • Clean and restock all china, pots and pans to its proper designated areas on the food lines to assure all service is up to the company standards.
  • Transport all silver items to their proper location utilizing the good handling procedures. Place in their designated area in the silver room.
  • Perform pest control procedures in all kitchens.
  • Sweep and mop all kitchen areas including walk in refrigerators to assure the highest level of sanitation and safety.
  • Always clean and store all clean items in their designated areas.
  • Maintain a clean and safe loading dock area. Remove all unnecessary equipment for proper safety.
  • Properly store all chemicals in their proper storage areas. Properly label all chemical bottles.
  • Remove all boxes throughout the kitchen. Crush and bail boxes.
  • Remove all trash cans. Empty, clean and reline can. Return to designated areas. When removing always use good judgment. Does not lift anything heavy, when in doubt ask for assistance.
  • Gallery employee to transport all commissary products to the restaurant early in the morning.
  • Proper cleaning of all equipment following all safety guidelines for the chemicals that are being utilized. This is to include the utilization of all Personnel Protective Equipment at all times.
  • Report any unsafe issues to the Stewarding lead for immediate attention. Work orders will be filled out by the Stewarding management team.
  • Set up and removal of barbecue grills for all banquet functions.
  • Assist all culinary crew employees when needed.
  • Teamwork - always assist all co-workers when in need of your assistance.
  • Comply with all Pebble Beach Company safety and health policies and procedures.

Absolutely Required Skills:
  • Ability to understand and follow instructions.
  • Communicate openly and clearly with all co-workers and Stewarding management team.
  • Knowledge of sanitation requirements and good organizational skills.
  • Must be able to meet the physical requirements of the job.
