Position Summary:
We are seeking an experienced, bilingual Overnight Bakery Shift Supervisor to lead our early morning production team from 2:00 AM to 10:00 AM. This role requires a strong technical baker who can actively produce high-quality baked goods while simultaneously managing a small production team. The ideal candidate works independently, ensures strict adherence to recipes, keeps the team on schedule, and ensures a seamless transition when the morning retail or distribution staff arrives.
Supervisory & Leadership Responsibilities:
- Team Leadership: Direct, delegate, and supervise the workflow of early morning kitchen associates, mixers, and packers.
- Production Management: Review daily bake sheets and ensure the team completes high-volume quotas efficiently before 10:00 AM.
- Quality & Standards: Enforce strict adherence to product weights, proofing times, oven temperatures, and food presentation.
- Compliance & Safety: Maintain sanitation schedules. Monitor team compliance with OSHA and Pennsylvania food safety standards.
- Inventory Control: Track ingredient usage, record waste, and note inventory shortages for the daytime purchasing manager.
Technical Baking Duties:
- Operate high-capacity commercial mixers, proofer boxes, and industrial deck ovens safely.
- Scale, mix, knead, shape, and bake large-scale dough batches from scratch based on established formulations.
Qualifications & Requirements:
- Experience: 3+ years of high-volume commercial baking experience, with at least 1 year in a team lead, captain, or supervisory role.
- Language Skills: Bilingual capability (English and Spanish) required.
- Schedule & Stamina: Reliable transportation to guarantee an on-time 2:00 AM shift start, including weekends.
- Physical: Able to lift up to 50 lbs consistently and stand or walk for the full 8-hour shift.
- Certifications: Active ServSafe Food Manager certification (or equivalent PA handler card) is required.
