Objetivo del puesto

Liderar integralmente la apertura y gestión estratégica y operativa del restaurante Osaka Nikkei en Chicago (1101 W Lake St., 715 m², ~186 pax), asegurando el cumplimiento de los estándares corporativos de calidad, servicio y rentabilidad de MCK. Será responsable de optimizar el desempeño financiero (P&L), construir y desarrollar al equipo, garantizar una experiencia excepcional para el cliente y consolidar el posicionamiento de la marca en el mercado de Chicago.

Requisitos del Puesto
  • Formación Académica: Licenciatura en Administración de Empresas, Gestión de Hospitalidad o campo relacionado. Posgrado indiferente.
  • Idioma: Inglés: Avanzado (requerido). Español: plus.
  • Conocimientos varios: informática | programación | etc
    • Food Handler / ServSafe Manager Certification requerida.
    • BASSET Certification (Illinois Liquor) requerida.
    • Certificaciones en vino, sake o sumillería son un plus.
    • Certified Restaurant Manager (CRM) o Certified Food & Beverage Executive (CFBE): deseable.
    • Manejo de sistemas POS (Toast, Aloha, Micros). OpenTable o plataformas de reserva. Manejo intermedio-avanzado de Excel y herramientas de reporte financiero (R365 o similar).
  • Experiencia Previa: Mínimo 5 a 8 años liderando restaurantes upscale, fine dining o conceptos premium de alto volumen en el mercado americano. Historial comprobado en gestión integral del P&L, elaboración de presupuestos anuales, proyección de ventas y control eficiente de costos operativos. Experiencia en aperturas de restaurante (pre‑opening). Conocimiento integral de operaciones FOH y BOH. Experiencia en reducción de rotación y desarrollo de equipos de alto desempeño.
Principales Funciones
  • Liderar la operación integral del restaurante (FOH y BOH), asegurando excelencia en servicio, calidad de producto y cumplimiento de estándares corporativos de MCK. Coordinar la fase de pre‑apertura: reclutamiento, capacitación inicial, setup operativo, relación con proveedores y sistemas.
  • Administrar el P&L del restaurante, desarrollar y ejecutar el presupuesto anual, controlar food cost, beverage cost y labor cost. Maximizar la rentabilidad a través de estrategias de pricing, reducción de mermas y eficiencia operativa. Cumplir metas de $100k–$125k en compensación anual alineadas con resultados.
  • Reclutar, liderar y desarrollar al equipo de ~80 personas, estableciendo planes de capacitación continua, evaluaciones de desempeño y estrategias para reducir la rotación, fortalecer el compromiso y construir una cultura de alto desempeño.
  • Garantizar altos niveles de satisfacción del cliente consistentes con los estándares de fine dining Nikkei. Gestionar relaciones con clientes VIP y promover la marca en la comunidad local a través de eventos y alianzas estratégicas.
  • Supervisar procesos de compra, recepción y control de inventario. Gestionar relaciones con proveedores asegurando calidad, confiabilidad y entrega oportuna. Controlar desperdicios, mermas y cortesías para reducir pérdidas innecesarias.
  • Identificar oportunidades de mejora operativa, implementar herramientas tecnológicas y proponer estrategias que optimicen la eficiencia, reduzcan desperdicios y eleven la experiencia del cliente.
  • Asegurar cumplimiento de normativas sanitarias, laborales y municipales de Chicago e Illinois. Gestionar Paid Leave (hasta 80 hrs anuales), Illinois Secure Choice y demás requisitos locales. Mantener certificaciones vigentes.
