Job description

An established and highly regarded Italian restaurant in Boulder is looking for an experienced General Manager to take ownership of the day to day operation and lead a talented team.


The GM will work closely with the owners and Executive Chef to oversee the complete restaurant operation, with responsibility for both the guest experience and business performance.


You'll be responsible for:

• Leading and developing a team of approximately 40 employees

• Managing daily restaurant operations and maintaining high service standards

• Creating a strong, accountable, and positive team culture

• Overseeing front of house execution, guest relations, reservations, and service flow

• Partnering closely with the Executive Chef to ensure food and service are consistently exceptional

• Managing labor, scheduling, inventory, purchasing, and operating expenses

• Monitoring sales and financial performance and identifying opportunities to improve results

• Developing and retaining strong service and management talent

• Maintaining an elevated wine and beverage program

• Supporting private events, live entertainment, and the restaurant's extended evening experience

• Using restaurant technology and reporting systems to maintain operational discipline


What We're Looking For

• Proven General Manager or senior restaurant management experience in fine dining or upscale full service restaurants

• Strong background with Italian cuisine, Italian restaurants, or comparable European dining concepts

• Strong wine and beverage knowledge

• Experience operating a restaurant with meaningful volume and financial responsibility

• Excellent understanding of labor, food cost, inventory, scheduling, and restaurant P&L

• Hands on leadership style with the ability to remain visible and engaged during service

• Strong communication skills and a polished approach to guest service

• Proven ability to hire, coach, develop, and retain restaurant teams

• Comfortable working closely with ownership and culinary leadership in an entrepreneurial environment

• Experience with Toast and Restaurant365 is a plus
