Job Description

Poulet Rouge© is looking for a hands-on and results-driven Director Operator to oversee the full performance of the restaurant. This role requires a strong leader who is passionate about customer service, operational excellence, and representing the brand’s values on a daily basis.

You will be responsible for ensuring smooth operations, strong financial control, team leadership, and delivering an outstanding guest experience.

Key Responsibilities

Operations Management:

  • Oversee daily restaurant operations and ensure everything runs efficiently
  • Manage inventory, stock levels, and place supplier orders
  • Create and manage staff schedules
  • Ensure payroll is processed and invoices are paid on time
  • Ensure the restaurant is always fully stocked and operational

Customer Experience & Brand Standards:

  • Deliver and maintain exceptional customer service standards
  • Handle customer complaints professionally and effectively
  • Represent and uphold Poulet Rouge© brand values
  • Maintain high standards of food quality, cleanliness, and service speed
  • Conduct daily inspections (food safety, cleanliness, health & safety)

Financial & Performance Management:

  • Monitor sales, labor costs, food costs, and overall profitability
  • Control expenses and optimize operational efficiency
  • Track performance on Uber Eats and Google (reviews, prep time, customer satisfaction)
  • Implement corrective actions to improve performance metrics

Team Leadership & HR:

  • Recruit, hire, and onboard employees
  • Train, coach, and develop team members
  • Supervise staff, including training/academy team
  • Foster a positive, respectful, and high-performance work environment

Maintenance & Problem Solving:

  • Resolve operational issues quickly and effectively
  • Coordinate equipment maintenance and repairs (tracking and follow-ups)

Qualifications

  • Proven experience in restaurant management (senior or director level preferred)
  • Strong leadership and team management skills
  • Excellent customer service mindset
  • Solid understanding of financial and operational KPIs
  • Ability to multitask and work in a fast-paced environment
  • Strong communication and problem-solving skills
  • Food safety certification (preferred)
  • Fully Fluent in English
  • Flexible availability (days, evenings, weekends)
