Position Summary
Garnet Hotels is seeking an experienced and hands-on Sous Chef to support culinary operations at our dual-brand Marriott property in Matteson, Illinois.
The Sous Chef will assist the Executive Chef in managing the Applebee’s kitchen, Delta Hotels café, in-room dining, banquet and catering operations, and the Fairfield Inn & Suites breakfast program.
The ideal candidate is an organized culinary leader with strong production, banquet, food-safety, and team-development experience.
Key Responsibilities
  •  Support the Executive Chef with daily culinary operations. 
  •  Lead kitchen operations in the Executive Chef’s absence. 
  •  Supervise, train, schedule, and coach culinary associates. 
  •  Coordinate food production for Applebee’s, café service, in-room dining, banquets, catering, and breakfast. 
  •  Ensure food is prepared according to recipes, quality standards, and presentation guidelines. 
  •  Assist with culinary execution for meetings, weddings, corporate events, and social functions. 
  •  Monitor food quality, portion control, consistency, and waste. 
  •  Assist with inventory, ordering, receiving, storage, and FIFO product rotation. 
  •  Maintain proper labeling, storage, and temperature records. 
  •  Help manage food and labor costs. 
  •  Maintain kitchen cleanliness, sanitation, and equipment. 
  •  Ensure compliance with food-safety regulations, ServSafe standards, and HACCP procedures. 
  •  Support promotions, seasonal menus, and special events. 
  •  Promote a positive, respectful, and accountable workplace culture. 
Qualifications
  •  Minimum three years of progressive culinary leadership experience. 
  •  Previous Sous Chef, Kitchen Manager, or comparable supervisory experience. 
  •  Experience in a hotel, resort, full-service restaurant, or high-volume food-service operation. 
  •  Strong knowledge of food preparation, production, and kitchen operations. 
  •  Banquet and catering production experience. 
  •  Thorough knowledge of food safety, sanitation, and HACCP procedures. 
  •  ServSafe Manager certification or ability to obtain it upon hire. 
  •  Strong leadership, communication, and organizational skills. 
  •  Ability to manage multiple priorities in a fast-paced environment. 
  •  Availability to work mornings, evenings, weekends, holidays, and special events.

  •  Marriott-branded hotel experience 
  •  Applebee’s or franchised-restaurant experience 
  •  Multi-outlet culinary experience 
  •  Menu development and food-costing experience 
  •  Culinary degree or professional culinary training 
Physical Requirements
  •  Ability to stand and walk for extended periods.
