Your Role

The Chef De Cuisine will be responsible for the daily operations of the Food and Beverage Department including outlets, banquets, and menu design. This individual will be responsible for providing support and training to the team both during the day, afternoon, and night shifts when required. This role requires an individual who thrives on working rotational shifts.

The Chef De Cuisine is primarily responsible for:

  • Preparing and cooking a variety of cuisine for all daily dining outlets and banquets, using skill, creativity and cost-effective methods;
  • Ensuring food is prepared according to standardized recipes and specifications to maintain consistency and meet all quality and food-cost standards;
  • Supervising, managing and overseeing all food operations;
  • Maintaining a hands-on approach to cooking “on the line” during busy service periods, while training and developing kitchen staff daily;
  • Interviewing, hiring and training all kitchen team members on departmental policies and procedures, approved safety standards, safe food-handling practices and sanitation requirements;
  • Successfully managing kitchen teams across multiple food outlets;
  • Achieving consistent financial targets through effective purchasing, inventory management, and food and labour cost-control methods;
  • Working closely with the F&B Manager to develop successful food, beverage and hospitality operations;
  • Complying with all regulatory health and safety codes and contributing to a strong workplace health and safety environment;
  • Managing all menu development throughout the year, including restaurant and banquet menus, special events and other requests;
  • Demonstrating catering and standalone restaurant experience;
  • Performing other duties as assigned by the F&B Manager or designate.

What You Bring to the Table

  • Minimum of three years of culinary experience in a similar role within a hotel environment;
  • Culinary apprenticeship or college-level accreditation; Red Seal certification or a recognized international equivalent is preferred;
  • Demonstrated leadership skills with a hands-on approach to training, developing and motivating culinary teams;
  • Proven experience in menu development and service design;
  • Strong knowledge of food and labour cost-control practices;
  • Excellent knowledge of current culinary trends;
  • Strong written and verbal communication, organizational and multitasking skills;
  • Ability to work effectively under pressure, meet deadlines and achieve departmental and hotel financial objectives;
  • Ability to collaborate effectively with team members across all departments;
  • Experience working in a unionized environment is an asset;
  • Flexibility to work various shifts, including early mornings, evenings, weekends and holidays
