Prep/Line Cook | Abeja Winery (Part-Time)
The Kitchen at Abeja is seeking a part-time Prep/Line Cook to join our culinary team. Abeja is located on a beautifully restored century-old farm in the rolling foothills of the Walla Walla Blue Mountains. The 49-acre site is home to the celebrated Abeja Winery, Inn at Abeja, and The Kitchen at Abeja. The Kitchen at Abeja celebrates diverse cultural roots and takes inspiration from leading American and European culinary concepts. Duties & Responsibilities:
  • Prepare and cook a variety of dishes according to recipes and chef specifications.
  • Handle and prepare ingredients, including washing, peeling, chopping, and slicing fruits and vegetables.
  • Execute precise techniques in food preparation to ensure consistency and quality.
  • Operate kitchen equipment safely and efficiently, including ovens, grills, and fryers.
  • Cook simple dishes such as soups, entrees, and desserts.
  • Monitor food temperatures and adjust cooking times as necessary to ensure food safety.
  • Plate and garnish dishes in an aesthetically pleasing manner.
  • Maintain a clean and organized work area, ensuring all kitchen equipment and surfaces are properly sanitized.
  • Wash and sanitize cooking utensils, tools, and kitchen equipment.
  • Follow proper food handling, sanitation, and safety procedures.
  • Monitor inventory levels of ingredients and supplies, restocking as necessary.
  • Inform the supervisor of any shortages or needs for kitchen supplies.
  • Properly label and store ingredients and food items.
  • Adhere to all health and safety guidelines, including proper food handling and storage procedures.
  • Follow all restaurant policies and procedures to ensure a safe working environment.

Requirements:
  • Prior experience as a line cook or prep cook (pastry experience preferred not required).
  • Knowledge of food safety and sanitation procedures.
  • State Food Handler's License(s).
  • Ability to work in a fast-paced, multi-tasking environment.
  • Able to cook proteins to pre-determined temperatures.
  • Knowledge of specialized equipment: Mastering of slicer, convection ovens, etc.
  • Must possess knife skills, the ability to adjust preparations for flavor, and accommodate customers' needs.
  • Strong Work Ethic: Commitment to maintaining high standards and dedication to quality in all tasks.
  • Team Player: Ability to work well in a team environment, with open communication and collaboration.
  • Fast-Paced Environment: Ability to work efficiently in a busy and fast-paced kitchen.
  • Attention to Detail: Precision in preparing ingredients and assembling dishes to maintain consistency and quality.
  • Ability to Follow Recipes: Ensure accurate preparation of ingredients and dishes according to specific recipes.
