Overnight Schedule: 10:00 PM–6:30 AM


The Overnight Kitchen Production Lead is a newly introduced, hands-on leadership position responsible for coordinating kitchen production during overnight hours. Working closely with the Kitchen Manager and Grab & Go Team, this individual will guide overnight team members, organize daily production priorities, and ensure all food is properly prepared, packaged, labeled, and stocked for the following day.

The ideal candidate is a dependable and experienced kitchen professional who can lead by example, maintain high standards, and keep production moving efficiently in a fast-paced environment. This position plays an essential role in preparing the department for a smooth and successful morning shift.



What You’ll Be Cooking Up
  • Lead and support the Overnight Kitchen Production Team throughout the shift.
  • Review chef-prepared production lists and assign tasks based on daily priorities.
  • Coordinate food preparation, cooking, packaging, labeling, and stocking for the following day.
  • Monitor workflow and help ensure all production is completed accurately and on time.
  • Train and guide team members on recipes, preparation methods, equipment use, sanitation, and department procedures.
  • Set up workstations and confirm ingredients, utensils, and supplies are ready for production.
  • Wash, chop, slice, and dice vegetables and other ingredients.
  • Measure and mix ingredients for salads, sides, sauces, entrées, and other prepared foods.
  • Perform cooking and preparation tasks such as reducing sauces, parboiling ingredients, assembling dishes, and portioning finished products.
  • Monitor food quality, freshness, portioning, appearance, and consistency.
  • Ensure prepared items are packaged, dated, labeled, rotated, and stored correctly.
  • Maintain accurate production records and communicate product or supply needs to department management.
  • Follow all recipes, nutritional guidelines, food-handling procedures, and sanitation standards.
  • Keep workstations, equipment, floors, and storage areas clean, organized, and safe.
  • Complete end-of-shift production checks and prepare the department for the incoming morning team.
  • Communicate production updates, shortages, or concerns to the Kitchen Manager.
  • Assist with additional kitchen and department responsibilities as needed.

Who We’re Looking For
  • Must be at least 18 years old.
  • Minimum of one year of experience in a high-volume, fast-paced kitchen; two or more years is preferred.
  • Previous lead, training, or supervisory experience in a kitchen, restaurant, grocery, catering, or food-production environment is preferred.
  • Working knowledge of kitchen health, sanitation, and food-safety standards.
  • Confidence using commercial kitchen tools, utensils, and equipment.
  • Strong leadership, communication, and organizational skills.
  • Ability to assign responsibilities, manage priorities, and keep production on schedule.
  • Strong attention to detail and commitment to food quality and presentation.
  • Ability to work independently and make sound decisions during overnight hours.
  • Dependable, positive, and willing to lead by example.
  • Must be available to consistently work the overnight shift from 10:00 PM to 6:30 AM.
