Vibrissa Beer and Kitchen – General Manager- Winchester

Salary: $75-90k per year, full-time salaried


Vibrissa Beer is an award-winning brewery and kitchen with two locations: right off the walking mall in historic Winchester, Virginia and on historic Main Street in Front Royal, Virginia. This position is for our Winchester Taproom and Restaurant.

Our goal is to create a gathering place for our customers where they feel welcomed and cared for, whether they seek small intimate gatherings, large catered events, or anything in-between. We designed and built-out our facilities with that goal in mind – our Winchester location includes a spacious taproom, beautiful outdoor beer garden, and full-service kitchen. Vibrissa, Winchester specializes in upscale pub fare, sourdough pizzas and nationally award-winning beer. 


Our General Manager will oversee the kitchen and manage the operations of the front of house. In doing so, they will build and retain a great team, design and execute operational processes to support exceptional execution and service, openly and effectively communicate plans and processes to staff, oversee performance, and build an organizational culture that places high value on excellence and exceptional customer service. The General Manager directly manages the Chef and the Front of House Staff. Reporting directly to the President, they are an active member of our senior management team, collaborating with that team to achieve our strategic and business goals. 


Key Responsibilities:


Operations Management:

  •  Staff Development: Recruits, hires and trains the Chef and all Front-of-House staff, including key leads, servers and bartenders to build a high-performing team dedicated to exceptional customer service.
  • Staff Scheduling: Oversees the scheduling of the kitchen and directly schedules Front-of-House staff to ensure staffing levels during all hours of service are sufficient to provide the exceptional customer service we demand, while controlling labor costs.
  • Performance Management: Oversees team performance to include establishing performance metrics, collecting performance data, providing feedback and one-on-one coaching, and intervening to address performance issues.
  • Event Management: Working with our Events Manager, prepares team for planned events and large catered parties to ensure exceptional service during these events. Acts as Day of Coordinator during large events.
  • POS and Menu Management: Sets up and maintains Point of Service (POS) system to include menus, specials, and discounts; ensures on-line and paper menus are current and up-to-date. Manages bar menu and recipe development. Oversees the culinary program in Winchester ensuring that the Winchester Chef collaborates effectively with the Front Royal Chef to create relevant and high quality offerings.
  • Inventory Management: Monitors beverage and bar inventory and places and retrieves orders to ensure ready supply of beverage items while controlling costs.
  • Compliance: Ensures compliance with health and safety regulations, as well as alcohol serving guidelines.
  • Floor Operations: Through the assistance and oversight of tipped Key Leads, ensures daily floor operations are well executed and that issues and problems are quickly addressed. Works closely with the Winchester Chef to ensure smooth service. Manages cash drawers and deposits.
  • Facility Management: Ensures Taproom facility is clean, well-maintained and attractive to our customers. Coordinates with our Maintenance Manager and ensures that Winchester repair and new installation projects are executed in a timely and cost effective manner.

Strategic Management: 

  • Strategic Alignment: Ensures operations are aligned with Vibrissa’s strategy and goals, including specific business development and sales goals.
  • Operational Systems: Builds clear and effective operational systems and processes that enable staff to effectively carry out their responsibilities and ensure customer service goals and other operational goals are met.
  • Sales and Marketing: Collaborates with marketing team to promote events, special offers, and to drive sales through effective promotions. Promotes Vibrissa and represents our organization and brand within the local community.

Financial Management:

  • Cost Management: Monitors and manages expenditure of resources, including staff resources, cost of goods and facility maintenance/investment costs to ensure cost metrics are achieved and resources are used judiciously. 
  • Cash Management: Ensures sound stewardship of cash by tracking and balancing cash receipts and making cash deposits regularly.

  • Communication: Excellent interpersonal skills to effectively communicate with team, customers, and suppliers.

  • Financial and Computer Tools: Computer proficiency to quickly master tools programs such as Canva, Toast POS, Microsoft Excel and Google Drive. Ability to develop, manage and track performance tools, budgets and return on investments.

  • Systems Thinking: Ability to approach requirements and issues systematically and develop comprehensive, long-term solutions aligned with the Vibrissa strategy.

  • Availability: This is typically a 40 hour per week job, but flexibility and accessibility is required. Availability on nights, weekends, and holidays is also required. (Vibrissa is open seven days a week, but is closed Christmas, Thanksgiving and New Year’s Day).

Education and Experience:

  • Management experience overseeing a customer-facing and service oriented team.
  • Previous experience in restaurant management. Specific experience in a brewery or taproom setting, is highly beneficial OR comparable management experience in a dynamic and customer-focused environment. Results and customer successes are required.
  • Certification in food safety management and alcohol management (i.e., ServSafe Manager, MART alcohol management) is required but can be obtained withing one month of hire.
