Direct Reports: Clubhouse Manager


Also Reports: Asst Clubhouse Manager and/or Manager on Duty MOD


     The Kitchen Expeditor is responsible for finishing plates coming out of the kitchen along with organizing and delivering the plates to the correct outlet in the club. They are also responsible for helping, sorting and rolling silverware for banquets and other outlets. Must know menus and details of the plating of the menu. If there is nothing to do in the kitchen, then position can help duties in the Fazio Grill.


Opening Duties:

  • Fill dressings and set up “Expo” line and add labels and dates to all dressings and accessories
  • Sour Cream, Butter and Salsa “iced down” on expo line
  • Sort, Polish and roll appropriate silverware and deliver to outlets
  • Stock kitchen with napkins for rolling and tray service
  • Make sure “expo” line is stocked with appropriate dishware and silverware i.e. Steak knives, soup spoons ramekins etc
  • Put ice in ice bin for the Banquet Soda Machine

Closing Duties:

  • Put up “expo” line and wipe down stainless steel
  • Clean and detach soda accessories and wipe down Banquet Soda Machine
  • Clean and turn off banquet tea an
    d coffee station and throw out used coffee/tea filters
  • Organize and wipe down heat lamp table
  • Restock dressings and inform kitchen leads of any outages or shortages
Requirements:
