Overview

Reporting to Chefs on Duty and the Sanitarian, a Culinary Steward is a key member of the culinary team, responsible for assisting with the cleaning, sanitation organization and other general duties. Responsible for maintaining cleanliness and sanitation of dishes, cookware, kitchen equipment, work areas, and utensils in an organized and hygienic manner. They should be willing to learn and maintain proper use of machinery and techniques related to the job, sanitation practices, food safety, and standards set by the company and the local health department.

This role pays an hourly rate of $20.00 CAD

Responsibilities
  • Follow and maintain set culinary department standards and kitchen guidelines.
  • Maintain a clean work environment.
  • Assist with keeping floors, walk ins, hallways and other food preparation areas clean, safe and organized.
  • Oversee the proper set up and breakdown of your work areas.
  • Properly wash, stack, and stores China, glassware, silverware, cookware, and storage containers.
  • Assist with timely organization of food deliveries. (i.e. make sure hot boxes are clean, plug in, sternos are lit etc.)
  • Assist with recycling and trash removal.
  • Follow daily cleaning, opening and closing checklists and timelines.
  • Assist with food prep and any other duties set forth or requested by the chef as needed.
  • Ensure compliance with local health department and other regulations.
  • Follow proper opening and closing protocols.
  • Assist in training new dishwashers.
  • Assist with event set-ups & breakdowns in line with events when needed.
  • Approach all encounters with guests and employees in a friendly and service-oriented manner.
  • Always comply with company standards and regulations to encourage safe and efficient facility operations.
  • Maintains the "Clean as You Go" policy.
  • Assist with the breakdown of commissary kitchens/concession stands/concession spaces and kitchen line, ensuring proper storage of food and equipment at the end of each meal period following food safety and sanitation regulations.
  • Follow company policies and procedures.
  • Performs other duties as assigned

Physical Demands:

While performing the duties of this job, the employee is regularly required to stand and walk, work in hot and cold environments, employee must regularly lift and/or move up to 50 pounds. Standing, walking, exposure to temperature changes, dust, fumes, or gases, climbing/ladders, squatting/kneeling, reaching, grasping, pushing/pulling, twisting/bending, lifting/carrying/pushing/pulling up to 50lbs on occasion, folding/unfolding, talking, hearing, and seeing.
