Position Type: Head Cook Position - This is a school year position.
Scheduled Hours:  8:00 AM 2:00 PM
Rate of Pay:     $20.54 per hour
Requirements:
Must be certified in Food Protection Management. Must be able to follow and execute all Plainville Cafeteria Procedures and maintain all standards of quality as established by Food Service Director and Assistant Director.  Must work well with others in a team environment, must demonstrate leadership skills with all Food Service Staff. Expectation is good rapport and communication with Students, Administrative Staff, and PHS Manager.  
















Responsibilities:

  • Overall responsibility for food and beverage preparation, both hot and cold. This includes daily menu offering, or any ala carte items that need cooking or heating.
  • Ensure the employee is in full uniform shirt, hat, and apron. Assist PHS Manager with ensuring the same for all staff.
  • Ensure menu items are available for the day's menu, prepare and cook items to proper temp. Use correct guidance on hot or cold holding and ensure food is prepared at proper time.
  • Ensure food is prepared with flavor, and served at proper temperature.
  • Take temperatures and record on POR (Production/Order Record)
  • Follow batch cooking procedures.
  • Assist in preparing service lines for hot or cold food. Ensure proper signage, correct utensils and presentation plates are displayed.
  • Assist in serving lunch to students.
  • Replenish service line as needed. Ensure hot food is hot and cold foods cold.
  • Rotate and have only clean, fresh pans on the service line. Re-pan food if it appears dry or baked on.
  • Ensure Cleaning and/or sanitizing schedule is followed. Daily, monthly and/or annual cleaning is completed.
  • Ensure Cleaning of kitchen equipment and service lines used during the day.
  • Shutdown of equipment at the end of day.
  • Assist PHS FS Manager for planning on weekly/monthly menu. This may be the next day or any further time period. Ensure that items are available and/or proper substitutions can be made.
  • End of day-ensure all hot foods are cooled properly. All cold foods are serviceable. Ensure wholesomeness of foods, place in fresh pans and store appropriately.
  • Assist PHS Manager with completing the POR portions made and used.
  • Develop function to properly utilize leftover and /unserved portions of food(s).
  • Assist PHS Manager with inventory control
  • Assist PHS Manager with weekly food order
  • Assist PHS Manager with paper/cleaning supply order
  • Assist PHS Manager with end of month inventory.
  • May be asked to assist with after normal hours catering functions. This could involve afternoon/evening, weekends and or Holidays.
  • May be asked to assist other employees with their Food Service tasks. This will depend on service and availability.
  • Must be able to lift up to 50 pounds.
