Position Overview
Job Title: Line Cook – Breakfast
Location: Garden Grille & Bar at Hilton Garden Inn Virginia Beach Oceanfront
Schedule: Full-Time; breakfast shift, approximately 5:00 AM–12:00 PM, 7-day operation (must include weekends and holidays). No night shifts.
Work Environment: Oceanfront hotel right on the boardwalk

Summary:
The Breakfast Line Cook is responsible for preparing and executing Garden Grille & Bar's breakfast service to Hilton brand standards, including both the hot breakfast buffet and cooked-to-order à la carte items. Working the early morning shift, you will handle prep, cooking, and station setup to deliver a high-quality, consistent breakfast experience for hotel guests.

Job Functions:

Breakfast Preparation and Cooking
Prepare and cook breakfast items to Hilton brand standards, portion sizes, and quality specifications.
Set up, stock, and maintain the hot breakfast buffet, monitoring food levels, freshness, and presentation throughout service.
Cook à la carte breakfast orders to guest specifications in a timely manner.
Operate kitchen equipment such as grills, flat-tops, ovens, and fryers safely and efficiently.
Monitor cooking temperatures and holding temperatures to ensure food safety and quality.

Station Setup and Breakdown
Set up the kitchen and cooking stations at the start of the shift, ensuring mise en place is ready for service.
Break down, clean, and restock stations at the end of breakfast service to set up the next shift for success.
Monitor buffet timing and replenishment to minimize waste while avoiding gaps in service.

Quality Control and Presentation
Maintain high standards of food quality, flavor, and presentation across buffet and à la carte items.
Follow plating, garnishing, and buffet presentation guidelines to Hilton brand standards.
Taste and adjust seasoning as necessary to ensure consistent quality.

Kitchen Organization and Cleanliness
Maintain cleanliness and organization of kitchen workstations, equipment, and utensils.
Follow proper food handling and sanitation procedures to prevent cross-contamination and ensure food safety.
Dispose of kitchen waste and food scraps in accordance with waste management guidelines.

Prep and Dish Support
Assist with prep work for breakfast and, as needed, for later service periods.
Assist with dishwashing and warewashing as needed to support smooth kitchen operations.

Inventory Support
Monitor inventory levels of breakfast food supplies and ingredients.
Notify kitchen leadership of low stock items or equipment malfunctions.
Assist with stock rotation and receiving deliveries.

Team Collaboration
Communicate effectively with kitchen staff, servers, and managers to ensure smooth breakfast service.
Support the kitchen team during busy periods and contribute to a positive work environment.
