Banquet Chef

Elvis Presley Enterprises Become a part of the exciting growth at Graceland! Graceland welcomes over 500,000 visitors each year, is one of the five most visited home tours in the United States, and is the most famous home in America after The White House. In 1991, Graceland was placed on the National Register of Historic Places. In 2006, it was designated a National Historic Landmark. Graceland visitors come from all walks of life, all ages, all musical tastes, all income levels, all educational backgrounds, and all parts of the world. Our employees are ambassadors to Memphis and work hard to ensure all of our guests are treated with the same southern hospitality that Elvis Presley was known for.

The Banquet Chef oversees all culinary aspects of banquet and catering functions in conjunction with the Executive Chef/Director of Food & Beverage. This is a full-time position at The Guest House at Graceland with variable/flexible working hours to include weekends, evenings, holidays, and overtime as required. This is an internal/external recruitment.

Responsibilities:

Under the direction of the Executive Chef/Director of Food & Beverage plan and oversee day-to-day banquet culinary operations and give direction to associates; create and implement menu selections for special banquet themes and events; ensure the consistency in the preparation of all food items according to hotel recipes and standards; follow all safety and sanitation policies; contribute to maximizing the overall departmental profit; control and analyze the quality levels of production and presentation guest satisfaction, merchandising and marketing, operation/payroll/food costs, sanitation, and cleanliness and hygiene; assist in monitoring and developing team member performance to include, but not limited to providing supervision, conducting coaching and counseling, conducting evaluation, training, scheduling, assigning work, and delivering recognition and reward; participate in the development of the kitchen's business strategies; supervise daily setup for menu, anticipate business volume, and adjust work areas/schedules accordingly; manage time effectively and efficiently; establish and maintain effective employee relations and interdepartmental working relationship; additional duties as assigned.

Required Skills, Knowledge and Abilities:

Management experience in full service banquets/dining/catering is required, hotel and formal bar experience is a plus; ability to cope with heavy workload; excellent communication and interpersonal skills is essential; ability to prioritize and work with limited supervision; excellent attention to detail; ability to perceive and work with a wide range of people; knowledge of food preparation including food safety techniques is required, Food and Beverage inventory control experience is helpful; skill to operate and clean various restaurant equipment; some knowledge of catering helpful, knowledge of Excel and Word computer programs is helpful.

Physical Requirements:

Ability to stoop, reach, walk and stand for long periods of time; ability to lift boxes weighing up to forty (40) pounds; speak clearly and distinctly.

Special Conditions:

Uniform is required; hair net must be worn while in food production areas; work in non-smoking environment; must follow, have knowledge of health codes and be Serve-Safe Certified or willing to become certified, possess or willing to apply for an ABC Card and Beer Card.
