ANNOUNCEMENT OF POSITION VACANCY

SUMMARY: Under general supervision of the General Manager, the Catering Supervisor is responsible for the creation and execution of menus at the Kellogg West Conference Center & Hotel. General responsibilities of the position include those listed below and will vary based upon a variety of factors including business necessity, location, and customer requests. Will be required to work evenings and weekends to support events, and conferences that serve Cal Poly Pomona, and surrounding community.

SOME OF THE THINGS THAT YOU WILL GET TO DO (this is only a small sampling of work variety):

  • Assists in menu creation, and translating client flavor profiles that represents cultural diversity, farm to table, and customer dietary lifestyles and needs that appeals to budget and high-end events.
  • Responsible for the oversight of small to large scale food production and presentation.
  • Provides on-site support and active supervision of catering and special events.
  • Frequently interacts directly with University constituents, and off-campus clients to plan, develop, and execute special events and menus; acts as the culinary expert.
  • Plans menus based on such factors as allergen sensitivities, dietary, lifestyle and nutritional considerations.
  • Accountable for and manage the accurate forecasting, ordering, receiving, inventory, and storage of all food, smallwares, and supplies sufficient to meet forecast demand with minimal or no waste.
  • Negotiates pricing and standards for various products with vendors in collaboration with other Hospitality division culinarians.
  • Writes and distributes accurate and complete menus, recipes, and food production records. Ensures staff are accurately completing various records as required.
  • Ensures HACCP food safety for all prepared, packaged received, left over, "FIFO", stored, and discarded food.
  • Responsible for the overall cleanliness, sanitation, organization, and safety of food production and storage areas.
  • Works with General manager to resolve equipment, maintenance, and facility issues quickly and effectively.
  • Responsible for ensuring work schedules are communicated appropriately and time is recorded per foundations standards.
  • Maintains positive behaviors and actions and provides the highest quality of service to customers at all times.
  • Reports all accidents and injuries in a timely manner.
  • Ensures continued adherence to all Foundation standards and procedures.
  • Performs other duties as assigned.
  • Must be available to work varying shifts (evenings, weekends, day).

SUPERVISION: Responsible for the selection, training, supervision, and evaluation of staff necessary to carry out effective operations of area assigned; directly supervises culinary and student staff; monitors the activities of contracted staff providing services.

MINIMUM QUALIFICATIONS:

  • Must possess a degree equivalent to graduation from a two-year college or recognized vocational certificate in culinary arts or management and a minimum of two years of food production management; or a minimum of five years' experience in a Sous Chef position.
  • Demonstrated institutional, hotel, or restaurant culinary skills to include large quantity production. College or university dining service experience is preferred
  • Experience with a computerized menu management system, and knowledge of office and industry software applications is necessary.
  • Strong leadership and communication skills are required
  • Servsafe Manager's Certification or equivalent
  • Ability to develop, interpret and apply policies and procedures to variety of situations.
  • Ability to be resourceful and to take initiative.
  • Ability to work cooperatively in a multi-ethnic environment.
  • Must have the ability to travel to various locations throughout campus and at times, off campus.
