Job description

Position Summary

The AM Line Cook is responsible for the preparation, setup, and execution of the AM Pantry/Cold Station. This position plays a vital role in producing high-quality cold food items for breakfast and lunch service, while also assisting with prep for large parties, banquets, and special events during downtime. The ideal candidate is organized, detail-oriented, and committed to maintaining excellent sanitation and food safety standards.

Key Responsibilities
  • Prepare and set up the AM Pantry/Cold Station prior to service
  • Produce cold food items including salads, dressings, cold sauces, fruit displays, sandwiches, and plated cold appetizers
  • Ensure proper portioning, presentation, and consistency of all items
  • Assist with prep work for large parties, banquets, and special events as needed
  • Maintain adequate par levels and communicate prep needs to supervisors
  • Properly label, date, rotate, and store all food products following FIFO procedures
  • Maintain a clean, organized, and sanitary workstation at all times
  • Follow all food safety, sanitation, and HACCP guidelines
  • Assist with opening and closing duties as assigned
  • Support other kitchen stations when necessary
Qualifications
  • Previous pantry, cold station, or prep cook experience preferred
  • Basic knife skills and understanding of cold food preparation techniques
  • Knowledge of food safety and sanitation standards
