Brought to you by the A16 Restaurant Group, Lucania is inspired by Southern Italian piazzas. It will be a gathering place where coffee turns into lunch, aperitivo into dinner, and the room fills as the day unfolds. Lucania becomes a place you can return to at any hour and find it alive, adding a sense of energy and gathering that the Ferry Building has not consistently held.

We are seeking an experienced Pastry Prep Cook with an innate sense of hospitality and genuine curiosity about the people, places, and traditions behind every bottle. Lucania's wine program will be rooted in Southern Italy while celebrating the extraordinary diversity of Italian wine.


We're looking for someone who can make wine exciting and approachable, whether introducing a guest to an indigenous grape they've never heard of or helping a longtime collector discover a new producer.

THE ROLE

As a Pastry Prep Cook at Lucania, you'll support the daily production of desserts, baked goods, and pastry components under the direction of our culinary and pastry leadership.


Pastry requires patience, consistency, and precision. You'll be responsible for accurately scaling ingredients, following recipes and production schedules, preparing components, and helping ensure that every finished product meets Lucania's standards.


We're looking for someone who enjoys the discipline of pastry, takes pride in the details, and wants to continue developing their craft as part of a collaborative kitchen.

WHAT YOU WILL DO

  • Support daily pastry and baking production according to recipes, prep lists, and production schedules.
  • Scale and measure ingredients accurately and consistently.
  • Prepare doughs, batters, creams, custards, fillings, sauces, and other pastry components.
  • Assist with the production and assembly of desserts and baked goods.
  • Portion, shape, bake, finish, and garnish products according to Lucania's standards.
  • Follow recipes carefully to maintain consistency in flavor, texture, yield, and presentation.
  • Monitor baking times, temperatures, and product quality throughout production.
  • Prepare and organize pastry mise en place for daily service.
  • Maintain proper labeling, dating, storage, cooling, and product rotation.
  • Follow FIFO procedures and communicate product levels and production needs to culinary leadership.
  • Minimize waste through accurate scaling, careful production, and proper product storage.
  • Maintain a clean, organized, and sanitary pastry workspace throughout the shift.
  • Properly operate, clean, and care for mixers, ovens, scales, and other pastry equipment.
  • Assist with receiving and organizing pastry ingredients and supplies.
  • Communicate clearly with pastry and culinary leadership regarding production, product quality, and shortages.
  • Support special events, seasonal menu changes, and additional production as needed.
  • Contribute to a kitchen culture built on respect, accountability, collaboration, and pride in the work.

REQUIRED QUALIFICATIONS

  • Previous professional pastry, bakery, or restaurant prep experience preferred.
  • Basic understanding of baking and pastry techniques.
  • Ability to accurately follow recipes and production schedules.
  • Comfortable working with weights, measurements, and precise formulas.
  • Strong attention to detail and consistency.
  • Strong organizational and time-management skills.
  • Ability to manage multiple production tasks and prioritize effectively.
  • Genuine interest in pastry, baking, and Italian culinary traditions.
  • Knowledge of Italian or Southern Italian desserts and baking is a plus.
  • Ability to work independently while remaining a collaborative member of the kitchen team.
  • Understanding of proper food handling, storage, and sanitation practices.
  • Reliable, punctual, and prepared to work as scheduled.
  • Current California Food Handler Card or ability to obtain prior to start.

  • This position requires standing and walking for extended periods, frequent bending, reaching, lifting, pushing, and pulling, and the ability to lift up to 50 pounds.
  • Work is performed in a fast-paced commercial kitchen with exposure to heat, sharp equipment, and varying temperatures.
